Roma Norte is the newest venture from the expert beverage team behind Puesto and Marisi, set to redefine the cocktail scene in downtown San Diego. Inspired by the vibrant cocktail culture of Mexico City's Roma Norte neighborhood, Roma Norte promises an immersive cocktail experience paired with light seafood-focused bites.

Key Role Responsibilities:

Education: Work with the Main Office and GM to establish and execute clear and consistent training plans for all Roma Norte employees:

• Collaborate with the VP of Bar & Spirits to design and rollout a best-in-class beverage training program (Beer, Wine, Spirit, and N/A) for all FOH staff members
• Assist with the overall rollout of new food, beer, wine, and spirits alongside the group culinary and beverage directors
• Review and update all training binders & onboarding materials to ensure that all leaders have easy access to the most current versions of these. Archive any old materials for reference only
• Be frequently present at pre-shifts to educate hourly team members on our Food & Beverage
• ‘Guest-test’ our education system by dining at our bar/restaurants and provide feedback to the onsite leaders about your experience
• Coordinate with the onsite team to execute F&B training for new hires
• Develop a FOH examination process for all food and beverages and establish a reward system for high performers
• Help educate and facilitate new menu tastings for the Roma Norte team and ensure that all supporting documents are current, engaging, and readily available
• Educate local teams on the specific products and purveyors to enrich their understanding and appreciation of our F&B sourcing
• Coordinate and execute brand-led training at all locations with local companies and brand reps
• Communicate with the Guest Experience Director to collect guest feedback and apply this to help improve targeted education for individual stores and across our family of restaurants
• Reinforce company wide marketing rollouts with an underlying education plan for specials’ and seasonal initiatives
• Establish open ‘office hours’ to educate staff further on all aspects of F&B and the Roma Norte brand
• Celebrate business wins, share ‘raves’ and publicly acknowledge high performers or large improvements on the weekly bar call and in-person
• Highlight hourly employees that have demonstrated a consistent ability to represent the Roma Norte brand well
• Review product PMIX reports to identify opportunity areas and provide data to onsite leaders accordingly
• Review recipe costs and educate onsite teams on the financial health of their respective bar programs
• Arrange and communicate additional education training outside of the scope of the Roma Norte menu
• Ensure all guest-facing bar and food areas are clean and organized to properly represent the Roma Norte brand
• Ensure that the POS (Toast) and all online platforms are up to date and accurate with all F&B items

Team Development: Work with the Main Office and GM to ensure all employees are trained and retrained, as needed, to offer the Puesto Perfect experience to our guests:

• Be the standard you wish to set and constantly look to ‘inspect what you expect from our onsite teams
• Establish weekly, monthly, and annual education goals for Roma Norte and ensure that the onsite leadership teams are aware of what these are and how they are measured
• Schedule weekly meetings with the onsite bar leadership team to perform a SWOT (strengths, weaknesses, opportunities, threats) analysis of their education program
• Work with the GM to perform annual performance reviews to celebrate education wins and identify areas of opportunity
• Hold team accountable to achieving goals and strategic plans
• Direct team in strengthening relationships with F&B purveyors and brand representatives as part of the broader Puesto/Roma Norte/Marisi Familia
• Help teach and build a culture of thoughtful generosity so that our leaders feel empowered to create raves through F&B 1’s
• Ensure all F&B training manuals are up to date and readily available on Dropbox for each leader to print and share
• Draft a training schedule for each new manager hired and meet with new managers on day one to review this training
• Establish an optional education program for team members looking to deepen their F&B education
• Review internal F&B communications to ensure that they are accurate and on-brand
• Grow “Gen Next” leaders for the Roma Norte/Puesto/Marisi family of restaurants by identifying internal talent

Skills and Knowledge:

• Excellent communication skills (verbal/oral/listening)
• Excellent understanding of Roma Norte/Puesto culture/philosophy
• Excellent cocktail bar and facilities operations knowledge
• Excellent food and beverage knowledge, specifically in Mexican food beer, and spirits

• Understanding of Microsoft Office Suite (Excel, Word, Outlook, Powerpoint)
• Understanding of restaurant POS systems (Aloha/Toast), CTUIT, Tripleseat, Pulse

Experience

• 3 years of restaurant/bar management experience preferred

Education

• Preferred Bachelor’s Degree or Certification in Hospitality-related field or equivalent expertise gained from time on the job

Physical

• Must be able to stand and/or walk for extended periods of time.
• Must be able to reach with arms and hands, bend, kneel and crouch.
• Must be able to lift items between 10 and 50 lbs.

Pay: $75,000.00 - $85,000.00 per year
