The Administration Building/Catering Manager's oversees and manages the operations of the Administration Buildings cafeteria and catering events. The Administration Building/ Catering Manager prepares and serves all food and beverages for the cafeteria and catering events. The Administration Building/Catering Manager completes all tasks to create meals for diners under the direction of the Site Supervisor. He/she applies basic and advanced cooking techniques, is expected to learn to cook more complex dishes as they gain expertise and are responsible for menu development. The Administration Building/Catering Manager is responsible for scheduling servers and cooks for site events, when required. He/she ensures operations are in compliance with all (District, Local, State, & Federal) food safety standards and regulations.

Qualifications
� Excellent communication skills, both verbal and written

� Basic mathematical skills

� High School Diploma or GED required. Associate or Bachelor's Degree in food service or a related profession preferred

� Minimum 3 years of food service experience.

� Able to prepare basic cooking techniques of eggs and vegetables

� Cooking food using several different cooking methods

� Follow recipes including measuring, weighing, and mixing ingredients

� Proficient understanding of HACCP requirements

� Completion of provided training

� Meet all required CEU?s yearly

� Must have or attain ServSafe certification

Physical Qualifications:

� The lifting/carrying requirements fall within a 50 -pound weight limit

� Required to push and pull on an occasional basis (11-33%) throughout the course of the workday.

� Required to reach on a frequent basis (34-67%) throughout the day while performing typical job functions. Reaching is primarily performed between the knee and shoulder levels. Rarely, (1-10%), overhead reaching is required to secure items stored above head level. Reaching between knee and shoulder levels may be performed unilaterally with either upper appendage on an occasional (11-33%) basis.

� Reports to work before scheduled starting time wearing proper professional work attire (including limited jewelry, no nail polish or fake nails and hair coverings when working with food. (maintain personal hygiene)

� Signs In and Out at the scheduled starting and ending times

� Sets up and stocks kitchen stations while maintaining a clean and organized work area.

� Assesses the appropriate quantity of food/supplies to order, prepare, and serve according to the menu and scheduled catering events.

� Demonstrates exceptional food presentations and buffet appearances.

� Creates his/her own BEO for events.

� Writes creative food and beverage menus considering clients? preferences and special requests (for example vegetarian alternatives).

� Cooks assigned foods during restaurant service while complying with Site Supervisor?s instructions and recommendations.

� Keeps food stations clean and organized.

� Complies with mandatory food safety standards and regulations.

� Responsible for putting away all deliveries while following FIFO procedures.

� Receives and verifies all deliveries and refuses unsatisfactory products or services.

� Prepares invoices for payment in a timely manner according to established procedures.

� Reports any personal injuries and/or accidents to the proper authorities.

� Reports equipment failure/needs according to established procedures.

� Communicates effectively with customers, Site Supervisor, and clients.

� Conducts inventory on a regular basis.

� Operates within the budget, taking necessary steps to ensure that the program maintains a positive balance.

� Performs job activities in a timely and efficient manner.

� Demonstrates a high sense of professionalism and discretion with sensitive matters.
Daily Duties & Responsibilities:

� Demonstrates basic food hygiene.

� Performs hands-on experience with creating menus from scratch.

� Demonstrates excellent organizational and time-management skills.

� Demonstrates customer service etiquette.

� Remains calm and makes quick decisions under stressful circumstances.

� Has the flexibility to work before or after scheduled operating hours

� Works independently and produces all dishes with expertise, without constant supervision.

� Keeps work stations organized and tidy, with prepared ingredients in separate containers for easy access during service and to keep foods from getting cross-contaminated

� Submits orders to appropriate vendors by required time frame.

� Generates revenue and strives to meet sales goals.

� Counts daily cash drawers with cashier before and after service, completes reconciliation forms, and completes forms related to the deposits.

� Accurately completes and submits all required daily, weekly and monthly food service reports and paperwork.

� Maintains accurate food service/safety records.

� Secures kitchen for next day and when not in use.

� Makes decisions related to the operation of the kitchen/cafeteria and outside event venues.

Working conditions

� Consistent hours spend standing on your feet for most of your shift

� Constant exposure to stoves, ovens, microwaves and sharp cooking tools like knives and scissors, so skill and caution are important

� Indoor work environment in a kitchen that is located where diners can watch their food as you prepare it

� Expected compliance with strict food safety regulations, including appropriate clothing and protective gear such as hairnets, disposable gloves and slip-resistant shoes

� Exposed to cleaning chemicals and equipment that may produce injuries, cuts, or burns if not properly handled correctly
