Position: Bistro Supervisor-Courtyard Marriott
Department: Food and Beverage Department
Reports to: General Manager
Supervises: Bistro Associates
Position Summary:
Supervises, trains, and schedules all bistro personnel. Hires, assists in termination, issues disciplinary action, and performs evaluations, develops associates through raining The Bistro Supervisor serves as a role model to demonstrate appropriate behaviors and positive guest relations. The candidate is responsible for prompt, friendly, and efficient service to guests in accordance with Marriott standards of food and beverage quality, presentation, and cleanliness. Maintains inventory levels. Creates an environment for motivation of Bistro personnel.

Job Specifications:
Physical Demands: Requires ability to stand/walk for significant periods. Requires ability to move fingers and hands easily and quickly. Requires ability to communicate both orally and in writing to guests and staff members. . Ability to follow schedule keeping in mind that the hotel is open 24 hours a day 365 days a year. Therefore, you may be required to work holidays, weekdays, weekends and different times during a 24 hour day. Ability to lift up to 50 pounds infrequently.
Essential Skills: Knowledge of applicable standards and procedures. Requires knowledge of budgeting, forecasting, basic accounting and money handling skills, staffing, scheduling, supervisory skills, ABC Laws, beverage control and alcohol awareness training and food safety. Requires exceptional skills and knowledge of guest relations: handling guest complaints and intoxicated guests.
Educational/Vocational Preparation: Associate’s degree in Hotel/Restaurant management, however, experience gained through on-the-job training may substitute for degree. Three years related experience in a beverage operation.
Primary Responsibilities:
  • Smiles when “On Stage”.
  • Adheres to PCI Compliance Standards
  • Maintains control of associate uniforms, ensuring that uniforms and name badges are worn, kept in proper condition, project high grooming standards, and are readily available at all times to associates. Ensures that non-uniformed associates are not allowed to remain on duty.
  • Is neatly attired at all times in the required uniform and name tag
  • Oversees the functions of the department to include general Bistro service
  • Ensures that all team members maintain a neat, clean and well-groomed appearance.
  • Monitors the set-up of the Bistro
  • Monitors the Bistro to ensure that it is adequately staffed and opened on time
  • Assists guest with any needs
  • Directly supervises employees in order to fulfill guest needs in accordance with hotel policies and procedures
  • Maintains the highest level of team member/guest relations
  • Reports and follows established procedures on any disciplinary problems or deviations from normal procedures to the General Manager.
  • Maintains a good working relationship with all departments
  • Orders and controls liquors and consumables.
  • Maintains company standards—ensures beverage and food preparation is performed according to specified procedures and recipes.
  • Assists the General Manager in cost accounting capacity—review expenditures versus revenues.
  • Manages in compliance with all Company, State, Local and Federal procedures.
  • Maintains health and sanitation standards.
  • Acts as part of the hotel’s “Manager on Duty” Program.
  • Contributes to the profitability and guest – satisfaction perception of other hotel departments.
  • Is trained in Alcohol Awareness Program (TIPS) and assists in ensuring all servers have received such training.
  • Holds monthly training meetings with staff.
  • Manages in compliance with all Company, State, Local and Federal procedures.
  • Maintains health and sanitation standards.
  • Adheres to all work rules, procedures and policies established by the company, including, but not limited to those contained in the NHG Handbook
