Mercado by Butchertown is Hiring an Assistant General Manager Near Nashville, TN

Butchertown Hall is local restaurateur Terry Raley’s vision of modern barbeque, inspired by the Central Texas meat market culture in which he grew up, and the late 19th-century butcher shop pursuits of this very neighborhood. Making extensive use of our 36 square-foot open fire hearth, alongside a custom-built high-capacity smoker, we patiently cook soulful, exciting food. Expect the finest wood-fired premium cuts, craft tacos & Tex-Mex standards, roasted oysters, delicately-charred garden vegetables, and the finest smoked brisket outside of Austin…ask around.


The Role…


At Butchertown Hall, the Assistant General Manager is responsible for coordinating aspects of the business by ensuring operational efficiency, guest experience, staff retention and meeting profit goals. An Assistant General Manager is also an ambassador for the Butchertown brand and fully embraces our ethos, service and support staff, and guest experience. As Assistant General Manager you are an influential leader and business partner to all departments that tell our story, deliver service, create culture, support operations, and guest satisfaction.


A successful Assistant General Manager will collaboratively partner with the Executive Chef, Kitchen Managers, Business Leaders, General Manager, and COO to develop and meet business objectives and goals resulting in optimizing the business’s performance and profitability.


Main Duties

  • Coordinate daily Front of the House and Back of the House restaurant operations
  • Organize and supervise shifts
  • Appraise staff performance and provide feedback to improve productivity
  • Responsible for shift planning using the scheduling systems to assign waitstaff based on anticipated demand.
  • Ability to direct staff to handle unexpected situations and customer concerns throughout a shift as needed.
  • Deliver superior service and maximize customer satisfaction
  • Respond efficiently and accurately to customer complaints
  • Regularly review product quality and research new vendors
  • Supervise Upkeep of Guest Areas by directing staff to attend to messes or accidents as well as personally assisting in cleanup.
  • Manage restaurant’s good image and suggest ways to improve it
  • Maintain brand guidelines, and build and reaffirm Butchertown Hall values with the team and members.
  • Assist in building and leading a team that efficiently drives sales and staff/member retention through F&B/Operations, Marketing, PR, Social and Events.
  • Control operational costs and identify measures to cut waste
  • Estimate future needs for goods, kitchen utensils and cleaning products
  • Assist the General Manager in guiding, developing and implementation of decisions that outline policies, procedure and systems to improve business operations, service, retention and over all experience
  • Interview and hire for a restaurant’s bar and waitstaff. Assist with developing a specialized hiring process to meet a restaurant’s needs.
  • Manage the training of the servers, bartenders, hosts, and bussers to meet the specific needs of the restaurant.


Required Skills/Qualifications

  • At least 1 year experience managing high-volume Food and Beverage (F&B) or multi-unit operations
  • Proficiency with restaurant Point of sale systems, including refunding customers, providing discounts, and comping items.
  • Organizational skills, able to juggle many responsibilities at a time.
  • Management experience in hiring, firing, training, and disciplining staff.
  • Ability to supervise, train and motivate all levels of employees
  • Ability to professionally assess and administer corrective or disciplinary actions when standards are not met or policies are broken
  • Ability to conduct professional interviews with prospective hires for FOH staff and adhere to P&D policies while positively provide support to the team in terms of growth, development and success planning
  • Understand, maintain, and enforce local and government regulated food safety, risk prevention, fire prevention, Labor laws and emergency procedures to ensure the safety of all staff and guests
  • Monitor, assess, report and develop action items to support service trends, guest/member/staff surveys
  • Creative and analytical thinker who encompasses strong business aptitude is driven by results and guest satisfaction.
  • Customer service skills dedicated to providing excellent customer service and improving the customer experience.
  • Naturally hospitable and social with the general public.


Physical Requirements

  • Must be able to seize, grasp, turn and hold objects with hands.
  • Must be able to work on your feet for at least 8 hours.
  • Fast paced movements are required to go from one part of the club to others.
  • Must be able to move, pull, carry, or lift at least 40 pounds.
  • Must be able to work in front of a computer screen for up to 5 hours per day.
  • Occasionally kneel, bend, crouch and climb as required.
