About the Position

The Food Services Shift Supervisor is responsible for directing the daily operations of an assigned kitchen unit in the County jail facilities to ensure quality and compliance to meet the USDA, FDA, and HACCP guidelines.About the Maricopa County Sheriff's Office

POSITION QUALIFICATIONS

Education

  • High School Diploma or GED

Experience

  • Two (2) years of high-volume food preparation experience.
  • One (1) year of lead and/or supervisory experience in a high-volume food service environment.

ORCombined education and experience qualifications

  • Post-secondary education may substitute for the required experience on a year-for-year basis.

Other requirements

  • Must possess a valid Arizona driver's license or have the ability to obtain by the time of hire.
  • Training with the exception of Arizona driver's license to be provided on-the-job: FEMA NIMS - IS100 and 700; Safety; Payroll; OSHA; PREA.
  • Prior to hiring, the Sheriff's Office requires that all candidates pass an extensive background review.

Our preferred candidate has

  • Experience in diet preparation.
  • Food Handler Certificate.

ESSENTIAL JOB TASKS

The tasks listed are a representation and not an all-inclusive list of essential job tasks for this position.

  • Provides first line supervision to Food Service Workers, Detention Officers and working inmates.
  • Reviews, determines and prepares working schedules and priorities of duties within Division, and reviews time off requests and approves time in the ADP payroll system.
  • Prepares Employee Performance Appraisals on a regular basis and reviews with employee.
  • Directs the preparation of inmate meals ensuring quality and compliance with health and sanitation standards, and assigns daily jobs to Food Service Workers, Detention Officers, and inmate workers.
  • Provides continual on-the-job training for employees and inmate workers on food handling techniques and methods, equipment operation, and safety and health standards.
  • Inspects facilities on a daily basis to ensure that safety and sanitation standards are met.
  • Oversees and ensures that food temperatures meet standards and meals are delivered on schedule.
  • Maintains and controls inventory of food and supplies.
  • Monitors compliance to Hazard Analysis Critical Control Points (HACCP).
  • Assists with compiling and submission of industrial and OSHA reports on a regular basis.
  • Orders and maintains new inventory at an acceptable level.
  • Reviews incoming orders, and oversees the loading and unloading of food products.
  • Implements, communicates, and documents menu changes.
  • Tracks food production statistics and prepares reports for distribution to management.
  • Reviews and implements measures to control meal costs.
  • Supervises food preparation and production area operation to ensure quality.
  • Documents incidents and prepares reports accordingly.
  • Manages the use of all donated food.
  • Performs utensil and inmate head-counts along with contraband searches for each meal.
  • Coordinates equipment repair requests and monitors repair service to ensure equipment is repaired in a timely manner.
  • Supervises equipment operation and sanitation.
  • Conducts security checks and maintains security in food production areas and kitchen facilities.
  • Performs computer data entry to complete reports and JMS diets, and sends and receives emails.
  • Trains employees on various heavy-duty industrial food service equipment.
  • Ensures menus, special diets, and religious meals are followed.
  • Conducts monthly and annual physical inventories.
  • Operates forklift and electric pallet jacks.
  • Performs basic First Aid on staff and inmates when required.
  • Supervises and follows procedures for the Recycle Program.
  • Supervises and monitors cleaning chemical usage, ensures chemicals are secured, and follows OSHA guidelines for chemical safety.
  • Supervises in-house inmate probation visits.
  • Transports finished products to the Warehouse.
  • Operates variety of heavy duty industrial food service equipment.
  • Conducts and/or attends staff meetings.
  • Operates a County vehicle.
  • Is present at work site to perform all tasks as scheduled and/or assigned by supervisor.

Working conditions
Work occurs in a food plant environment in a jail facility. Tasks require manual dexterity to operate heavy duty industrial food service equipment. Position involves teamwork and daily contact with and supervision of adult inmates.The following environments described are only representative of how the essential job tasks are currently performed or envisioned. Work Environment:

  • Indoors in jail environment, and rarely outdoors
  • In temperatures rarely above 90 degrees and frequently below 40 degrees
  • Conditions including use of stairs or ladders, chemicals/fumes, and wet/damp areas
  • Areas with bright or dim lighting and/or high noise levels

  • Pushing/pulling a weight of one hundred (100) pounds for a distance of one hundred (100) feet

  • Practices, and methods used in preparing, cooking, and serving food in large quantities.
  • Maintaining kitchen equipment.
  • Occupational hazards and safety precautions of kitchen areas and equipment.
  • Common weights and measures.
  • USDA, FDA, and HACCP guidelines.

Skill in:

  • Applying proper sanitation methods.
  • Supervising and training food service staff and adult working inmates.

Ability to:

  • Order, store, and inventory large quantities of food.
  • Compile statistics and prepare production reports.
  • Plan meal preparation and portion control.
  • Conduct facility inspections and security checks.
  • Maintain accurate accountability logs and enforce all safety standards.

SELECTION PROCEDURE:
