Location Description:
Hawks Cay Resort, an iconic destination resort in the Florida Keys, reopened in August 2018 following a $50 million renovation. A recipient of the prestigious AAA Four Diamond Award and a member of the Preferred Hotel Group Lifestyle Collection, this 60-acre, tropical destination boasts 177 guestrooms and 250 two- and three-bedroom villas, a full-service marina, six restaurants, saltwater lagoon, five swimming pools, kid and teen clubs and spa.
Overview:
Responsible for acting as a contact person for banquet functions. Also responsible for supervising banquet staff, ensuring that functions are set correctly, helping with paperwork, linen inventory and training of staff.
The primary duties of the banquet captain are to train (according to the company standards), supervise, and assist the Director of Banquets to manage the banquet department.
ACCOUNTABILITIES:
  • The primary responsibility of the banquet captain is to direct and assist service personnel in serving successful banquet events while maintaining high standards of service.
QUALIFICATIONS:
Education & Experience:
  • At least 2 years of progressive experience in a hotel or a related field. High school diploma preferred. Previous supervisory responsibility preferred.
  • Safe Serve Certified
  • TIPS Certified
Physical Requirements:
  • Flexible and long hours sometimes required.
  • Heavy work – Exerting up to 100 pounds of force occasionally, and/or 50 pounds of force frequently and/or up to 20 pounds of force constantly to lift, carry, push, pull or otherwise move objects.
  • Ability to stand during entire shift.
Mental requirements:
  • Must be able to convey information and ideas clearly.
  • Must be able to evaluate and select among alternative courses of action quickly and accurately.
  • Must work well in stressful, high-pressure situations.
  • Must maintain composure and objectivity under pressure.
  • Must be effective in handling problems in the workplace, including anticipating, preventing, identifying and solving problems as necessary.
  • Must have the ability to assimilate complex information, data, etc., from disparate sources and consider, adjust or modify to meet the constraints of the particular need.
  • Must be effective at listening to, understanding, and clarifying the concerns and issues raised by co-workers and guests.
  • Must be able to work with and understand financial information and data, and basic arithmetic functions.
Other abilities, skills, knowledge:
  • Thorough knowledge of banquet procedures and serving standards.
  • Work with Delphi system

DUTIES & FUNCTIONS
Essential:
  • An opening and closing captain will be scheduled to cover an AM shift and a PM shift (when needed as business dictates), to supervise the operation and completion of meetings functions, breaks and meal events.
  • Work closely with client/meeting planner to make sure all needs sure met. This includes daily greeting of the client and taking care of any needs or request.
  • Work closely with Banquet Director, Sales Manager and Banquet Chef and other departments to ensure all details on BEO are worked out for a smooth operation of events.
  • Work closely with Banquet Director on improving our product and the guest’s experience.
  • Requisition liquor, beer and wine as needed, based on BEO.
  • Maintain regular attendance in compliance with Hotel standards, as required by scheduling which will vary according to the needs of the hotel.
  • Maintain high standards of personal appearance and grooming, which include wearing the proper uniform and nametag when working.
  • Comply at all time with Hotel standards and regulations to encourage safe and efficient hotel operations.
  • Maintain a warm and friendly demeanor at all times.
  • Hold pre-function meetings, and check staffing and menus prior to events.
  • Make sure all required equipment is available for the event.
  • Gives job task to servers and assign stations.
  • Responsible for the requisition and return of liquor, wine, beer, etc.
  • Assist Director of Banquets with the monthly department inventory.
  • Effective communicate with kitchen.
  • Supervise all banquet events.
  • Prepare guests checks and obtain signatures from guest contact.
  • Constantly check outgoing events until they end.
  • Assist servers throughout event.
  • Supervise clean up and all banquet space.
  • Check servers out when event is completed.
  • Prepare captain report.
  • Assist in scheduling staff.
  • Complete work orders on broken or non working items.
  • Attend to BEO meetings and PRE-con meetings.
  • Supervise set up team on a daily basis, (make assignments and check them at the end of each task).
  • Keeping the lines of communication open with the Banquet Director.
