Length of Work Assignment: June 2024-August 2024

Position Summary

The food service manager will supervise and manage the kitchen staff and food service at camp. Assume direct responsibility for food service including but not limited to: Maintaining inventory and placing food orders as needed, responsible for the menu planning of special diets, ensuring food is prepared in a timely manner, assisting in the training of kitchen staff, overseeing and managing the food service staff.

Essential Duties & Responsibilities

  • Oversee the daily operations of the camp food and dining hall service.
    • Plan and prepare nutritionally balanced camp meals, snacks, and pack-out food.
    • Ensure the safe, efficient preparation and service of camp meals.
    • In coordination with the Camp Director, manage the camp menu which includes special diets, salad bar, and snack items for the summer.
    • Track meal counts, food consumption and waste, adjust as needed.
  • Under the direction of the Camp Director, oversee inventory and the ordering of food, equipment, and supplies.
    • Maintain accurate and up to date inventory of food and kitchen supplies.
  • Ensure high standards of cleanliness, sanitation, and safety.
    • Arrange for the routine maintenance, sanitation, and upkeep of the camp kitchen; per Kern County Health Department and American Camp Association standards.
    • Clean and maintain all food-service areas, including kitchen, dining hall, dry storage, walk in refrigerators, freezers and trash receptacles.
    • Inspect equipment and ensure repairs as necessary.
    • Promote practices that seek to reduce waste, reuse items, and recycle as much as possible.
    • Properly store kitchen food and supplies at the end of the camp season.
  • Oversee and work as a collaborative team member of the food service team.
    • Ability to organize, and coordinate job tasks with Chefs, and Food Service Assistants.
    • Assist with directing the work of Chefs, and Food Service Assistants.
  • Manage the routine sanitation of kitchen, dining hall, and related equipment.
    • As needed, wash all dishes, serving and preparation equipment, and utensils according to regulated washing methods and temperatures.
    • Clean, organize, and maintain all food-preparation and storage areas.
    • Reduce waste, reuse items, and recycle as indicated through the camp’s procedures.
    • Collect and dispose trash in kitchen and dining hall areas following camp’s procedures.
  • Other duties as assigned.

GSGLA Lakota Overnight Camp

The Girl Scouts of Greater Los Angeles Camp Lakota is a state of the art, recently updated residential camp. Located just 90 miles from downtown Los Angeles, this premier camp site will host a full summer camp season. The camp will focus on providing a stand-out girl-led experience for campers of all ages and communities across our 6,272 square mile footprint. The camp offers a variety of specialty activities including a high ropes challenge course, horseback riding, swimming, and archery.

Qualifications


Qualifications (Minimum Education and Experience)

  • Must be 21 years of age or older. 
  • College degree preferred. 
  • Documented progressive supervisory experience. 
  • Documented experience in senior staff roles at organized camps, especially overnight camps. 
  • Ability to drive, possession of a valid driver’s license, and clean DMV record. 
  • Must be able to obtain or become certified in First Aid/CPR prior to first day of work. 
  • Must submit health history form prior to first day of work. 
  • Must be committed to work the entire camp season and attend all pre-camp trainings. 
  • Ability to live onsite acting as an on-duty supervisor for the duration of the camp season.

Physical Requirements

  • Operate kitchen equipment according to safe recommended methods. 
  • Frequently moves food from deliveries into and around the kitchen, trays of dishes, supplies, and equipment weighing up to 40 pounds. 
  • The incumbent must be able to perform this job safely, without endangering the health or safety of him/herself or others.
  • Communicates and works with all ages and skill levels and provide necessary instruction to campers and staff. 
  • Observes camper and staff behavior, assess its appropriateness, enforce appropriate safety regulations and emergency procedures, and apply appropriate behavior-management techniques. 
  • Needs to identify and respond to environmental and other hazards related to the activity. 
  • Constantly responds appropriately to situations requiring first aid. Must be able to assist campers in an emergency (fire, evacuation, illness, or injury) and possess endurance required to maintain constant supervision of campers. 
  • Frequently moves luggage, tables, chairs, and program equipment weighing up to 40 pounds. 
  • Needs to traverse and move several miles daily, at various grades, elevations, and on uneven terrain. 
  • Possess endurance including prolonged standing, some bending, stooping, and stretching. 
  • Needs to sustain activity at 6,000 feet (1830 meters) in elevation. 
  • May lift to 50 lbs. periodically.  If more, the incumbent must request assistance.
  • Must be able to live in a rustic camp setting and work flexible hours.
  • Operate with daily exposure to various weather conditions and animals such as bugs, snakes, bats, raccoons, and other wilderness animals common to the area.
