Position Overview:

The Director of Culinary Services is responsible for planning, organizing, developing and directing the overall operation of the Culinary Services department in accordance with current federal, state, and local standards, guidelines, Board policies and procedures, and the regulations that govern the long-term care industry.

Essential Functions

  • Oversees menu development, ordering, preparation, serving, and monitoring of all meals.
  • Works closely with the consulting dietitian in the improvement of menus, special diets, alternative choices, etc.
  • Obtains specific feedback, to ensure high quality meals and diverse alternatives, from residents, resident family members, care coordinators, and Executive Director regarding nutrition and dining program, likes and dislikes, etc.; provides statistical data on food preferences and wastage.
  • Oversees the dining services budget to ensure that expenditures are maintained within approved parameters.
  • Performs human resource functions in department related to staffing, scheduling, performance and time and attendance reconciliation.
  • Supervises the staff of the dining services department.
  • Assists with special events that involve food for residents, staff and meetings.
  • Maintains certifications as required and seeks additional certifications as needed.
  • Serve on committees.

Supervisory Responsibility
This position manages all employees of the department and is responsible for the performance management and hiring of the employees within that department.
Work Environment
This job operates in both a kitchen and professional office environment. Housed with equipment such as an oven, stove, dishwasher, slicer, coffee machine, steamer, mixer and chef's knives. The employee is frequently exposed to heat, steam, fire and noise.
In the office this role routinely uses standard office equipment such as computers, phones, photocopiers, filing cabinets and fax machines.
Physical Demands
The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job.
While performing the duties of this job, the employee is occasionally required to stand, walk, sit, use hands to finger, handle, or feel objects, tools or controls, reach with hands and arms, climb stairs, balance, stoop, kneel, crouch or crawl, talk or hear, and taste or smell. The employee must occasionally lift or move up to 20 pounds. Specific vision abilities required by the job include close vision, distance vision, color vision, peripheral vision, depth perception and the ability to adjust focus.
Travel
Travel is primarily local during the business day, although some out-of-area and overnight travel may be expected for meetings and conferences.
Required Education and Experience

  • High School diploma or equivalent.
  • Current food handler's card.
  • Serv Safe Certification
  • Four years of related experience or an equivalent combination of education and experience.
  • Dietary Manager Certificate.

  • Two years experience in a supervisory role, preferably in long-term care in Dining Services.

Work Hours (expected): 8:00 a.m. - 4:30 p.m. M-F with some evening and weekend hours as needed.
