BRASS, TUSK BAR, and NINEPIN CAFE, new food and beverage concepts in the Evelyn Hotel in Flatiron/ Nomad, (opening soon), is seeking an experienced culinary professional to overseeing the operation.
We are looking for exceptional leaders at the senior point of their career to join our team.Plan, coordinate and oversee culinary operations at food & beverage outlets at the Evelyn Hotel in coordination with the Culinary Director and Director of Operations.
- Oversight of all food outlets (restaurant, lobby bar, cafe and in-room dining)
- Oversight of CDC, Sous Chefs, Line Cooks, Prep Cooks, Porters
- Planning menus and executing in accordance with the venue’s mission and philosophy, pricing the menus to maximize profitability.
- Monitor food preparation methods, portion sizes, garnishing and presentation of food to ensure that food is prepared and presented in an acceptable manner.
- Training of all culinary management team.
- Establish standards for personnel performance and customer service.
- Oversee correct receipt, payment, storage and handling of food and beverage products.
- Development of stations to ensure economical use of food and timely preparation
- Equipment maintenance, including management of maintenance contractors.
- Monitor inventory and payroll expenditure in accordance with authorized budgets.
- Responsible to meet or exceed budgeted food sales goals.
- Ensuring the establishment operates in accordance with all applicable laws and regulations
