The Pack Mule is looking for someone with an appreciation for the artistry and science behind producing wonderful baked goods to join our team as the Lead Baker.

Opening in Summer of 2024, The Pack Mule aspires to bring quality produce, craft beverages, and local goods to downtown Rapid City as the premier specialty grocer. We will provide a great atmosphere in which to celebrate and explore the regional food scene either as a shopper, or by partaking in cooking classes and tasting events.

About the job:

The Head Baker will support the Pack Mule's mission of offering top tier groceries and customer service by spearheading our bakery program. You will be tasked with developing and refining recipes for fresh bread and dessert items as well as curating the complete selection of baked goods on offer from The Pack Mule. The ideal candidate will have past baking experience, ideally in a bakery, grocery store, or restaurant setting.

Additional duties may include:

• Bake a variety of breads, pastries, desserts, and other confections following established recipes.
• Measure and weigh ingredients precisely using scales and measuring cups.
• Mix doughs and batters using mixers and other equipment.
• Operate ovens and adhere to baking times and temperatures.
• Decorate cakes, cupcakes, and other pastries with icings, glazes, and creative flourishes.
• Maintain a clean and organized work area according to sanitation guidelines.
• Ensure the quality and freshness of all baked goods.
• Maintain stock levels of prepared goods and rotate products to minimize waste.
• May assist with packaging baked goods for sale.
• Develop new recipes and contribute to the bakery's menu

Qualifications:

- Previous experience working in a bakery or kitchen setting
- Knowledge of food safety practices and procedures
- Ability to work with various kitchen tools including knives
- Familiarity with pastry techniques is a plus
- Strong attention to detail and the ability to follow recipes accurately
- Culinary or baking certification is preferred
