Baker – Mixing and Baking Experience
The Acme Bread Company is looking for an addition to our staff of friendly, energetic bakers with mixing and baking
experience for our location in South San Francisco.
This position requires extensive experience in commercial artisan baking methods including mixing lean and enriched
doughs, machine- and hand-shaping loaves and rolls, and baking in large-capacity deck and rack ovens. The candidate
must be able to work safely, efficiently, and skillfully in all phases of production with minimal training.

Requirements:
➢ Must be able to work nights, weekends and holidays
➢ Must have a reliable mean of transportation
➢ Must be legally eligible to work in the US
➢ Fully vaccination status required
➢ Adhere to production, employee-related, and food safety procedures and stay current with procedural changes
➢ Adhere to production schedule
➢ Receive deliveries in accordance with food safety practices
➢ Organize, clean, and prepare the work station
➢ Read recipes; accurately scale and mix doughs
➢ Maintain daily mixing log
➢ Oversee bulk fermentation, dough handling, and final proofing of loaves and rolls
➢ Bake breads and rolls according to established standards and methods in the Heuft, deck, and rack ovens
➢ Communicate with the rest of the production crew
➢ Communicate observations of changing dough conditions to Leads and to mixers of surrounding shifts
➢ Promptly report problems with product, equipment, or personnel to Leads or to Production Manager
➢ Provide training to new employees and participate in ongoing training of existing staff
➢ Communicate with Delivery Drivers regarding product shortages
➢ Complete and return monthly training on time
Requirements:
➢ Must be able to work for at least four periods per day of consecutive hours at a time.
➢ Must be able to safely operate the dough dividers, scissor lift, bread molders, and other equipment related to bread
making and cleaning tasks.
➢ Must be able to push or pull stacks of bread dough in boxes totaling up to 25pounds on wheeled dollies through the
bakery into their proper positions.
➢ Must be able to bend, grab, lift, and turn to safely transfer large boxes of dough (up to 5pounds each) from stacks
onto a 36-inch-high table.
➢ Must be able to safely and repeatedly grip a dough knife and reach, cut, lift, turn, and bend to transfer the proper
amount of dough from the table into other dough boxes.
➢ Must be able to safely and repeatedly bend or reach and turn to grab and lift boxes of bread dough (up to 3pounds)
onto or off of stacks from ground level to 5.feet high and tip the dough into the bread divider
➢ Must be able to safely pull or push fully loaded proofing racks and/or stacks of full dough boxes, which can weigh up
to 30lbs.) through the bakery to their proper locations.
➢ Must be able to safely and repeatedly pull the bread dough pieces from the dividers and grab, lift, turn, reach, and/or
lean to place the pieces (up to 1pounds per hand) onto boards for resting.
➢ Must be able to safely and repeatedly bend, lean, turn, and/or stretch to grab those dough pieces and transfer them
onto the table for molding.
➢ Must be able to safely and repeatedly reach, lean, grab, and grip those individual dough pieces (up to 4.pounds each)
and form them into the proper shape and reach and lean to deposit them into the correct basket, pan, tray, or cloth for
proofing.
➢ Must be able to safely and repeatedly bend, reach, and lift (in tandem with another baker) a shelf full of proofing
bread (up to 6pounds) onto or off of a rack, from near ground level up to 5.feet. on occasion require various other
gripping, bending, turning, pushing, pulling, and lifting tasks—either alone or in tandem with others—of implements
or materials of up to 5pounds.

Wages:
➢ Between $2to $2per hour, depending on applicable experience and qualifications
