Job Summary:
The Prep Cook is the backbone of our kitchen operations, ensuring we are ready for the high-volume energy of the summer season. You are responsible for preparing our famous homemade dough and fresh ingredients daily, maintaining the high standards that keep our guests coming back. This role is essential for keeping our pizza line, baking, and production moving efficiently.

Production & Quality Control
- Dough & Baking: Prepare all pizza dough from scratch daily, ensuring consistency and quality.
- Station Readiness: Set up and stock prep and line stations with all necessary supplies and ingredients for the day’s service.
- Recipe Execution: Prepare ingredients for every menu item using our proven, time-tested recipes.
- Portion Control: Memorize and strictly utilize serving portion sizes and basic prep procedures to ensure consistency and minimize waste.
Kitchen Operations & Safety
- Sanitation Standards: Maintain a clean work environment at all times. Ensure the kitchen, prep areas, and storage meet restaurant code cleaning standards.
- Inventory & Rotation: Monitor product freshness and rotate stock (FIFO) on a strict schedule to ensure peak quality.
- Maintenance: Perform daily opening and side work; clean kitchen equipment and dishes as needed.
- Safety Compliance: Follow all sanitation and safety policies; assist in training other prep staff on these standards.
Skills and Qualifications

- Reliability: Honest, dependable, and committed to working hard throughout the busy summer season.
- Efficiency: Strong critical thinking and time management skills to handle high-volume prep lists.
- Physical Stamina: Ability to work in a hot, humid kitchen environment and remain on your feet for 8-hour shifts.
- Technical Skill: Ability to operate industrial dishwashers and kitchen machinery safely and rapidly.
Operational Readiness
- Communication: Employees must be accessible via cell phone and/or email for scheduling and human resources applications.
Experience/Education
- Experience preferred, but we are willing to train the right candidate with a strong work ethic.
- High School Diploma or GED (or actively enrolled).
Physical Demands
- Regularly required to walk, reach, balance, stoop, and use hands for fine motor tasks (fingering, handling tools).
- Must be able to lift and move up to 35 pounds (kegs/cases/dough) and frequently use stairs.
- Specific vision abilities required include close vision and the ability to adjust focus.
Work Environment
- This role involves working in a busy kitchen, using ovens, mixers, knives, and cleaning chemicals.
- Exposure to hot water, potentially slippery floors, and prolonged standing is expected.
- Summer hospitality requires the flexibility to work weekends, holidays, and late hours.
