About the Role
The Parker Hollow is hiring a Oyster Shucker / Raw Bar Manager for its Parkville, Missouri operation. This is a full-time position for an experienced hospitality professional who combines strong oyster knowledge with the ability to manage a busy raw bar station and interact directly with guests.
The role runs Tuesday through Saturday, with prep beginning earlier in the day and breakdown continuing after service. You'll be responsible for oyster preparation, raw bar production, station organization, and guest interaction while working at the bar. The position also includes tip income in addition to the base salary.
What You’ll Do
- Shuck and prepare oysters for service
- Manage the raw bar station from prep through breakdown
- Maintain strong product knowledge across West Coast, East Coast, and Gulf oysters
- Understand oyster farms and regional differences
- Prepare tartines, crudo, ceviches, aguachiles, and charcuterie
- Maintain a clean, organized, and fully stocked raw bar
- Interact with guests and provide an engaging bar experience
- Work efficiently during service while maintaining quality and presentation
