We’re hiring a Restaurant Manager to Live. Work. Explore. at the South Rim of the Grand Canyon!

Job Summary:

Lead and work side by side with a total team of 125 in providing a memorable dining experience to an average of 1,000 guests per day in the historic El Tovar Dining Room with white tablecloths and refined points of service in addition to managing operations in room service and banquets.

The Details:
Position Type: Full-Time, Year-Round
Pay: $67,000.00 per year depending on experience

Schedule: May include weekends, evenings, and holidays.

Responsibilities
  • Work closely with the Culinary Leadership Team to maintain a harmonious work environment that ensures product quality, appearance, timeliness, flow and taste.
  • Effectively interact with a diverse customer and employee base, government officials and company business clients.
  • Assess guest satisfaction by visiting with patrons during their meal and handling all guest complaints in timely manner.
  • Coach team members daily as needed to drive premium guest service, job satisfaction and maintaining team member morale.
  • Review and analyze monthly results, highlight problem areas, and discuss these with the leadership team and appropriate team members to resolve problem areas.
  • Control labor and operating expenses through effective forecasting, scheduling, budgeting, purchasing decisions and inventory controls.
  • Ensure proper stock levels of operating supplies including, but not limited to china, glass, silver, menus, and equipment.
  • Develop and maintain control systems that will ensure quality and portion consistencies.
  • Coordinate all tour groups, banquets, and special events as necessary based on the specifications noted within the booking.
  • Oversee, administer, and actively participate in a training program for Servers, Bussers, Host/Hostess, Cocktail Servers, Bartenders, etc.
  • Reinforce positive behaviors or coach to improve performance of Restaurant Managers and Team Members as needed. Continually improve overall operations
  • Consult with Director and Assistant Director for recommendations and approval of all promotions for the dining room and lounge.
  • Author and administer reviews for hourly employees and Restaurant Managers. on an annual basis.
  • Approve all payroll, accounting and Human Resources forms that fall within the department.
  • Supervise and participate in all monthly inventories.
  • Remain current and enforce sanitation standards and capacity limitations for all front of house areas in accordance with company, National Park Service and Serve Safe standards.
  • Responsible for establishing and overseeing side work duties, special opening and closing duties for front of the house staff while maintaining a work environment that is Health Inspection ready at any point in time.
  • Personally manage all VIP reservations with professionalism and discretion.
  • Facilitate shift meetings and effectively drive an environment of learning and education which results in a positive work atmosphere while always striving to do better across the board.
  • Ensure that assigned staff is adhering to risk management procedures and to company sustainability policies.
  • Hold leadership responsible to achieve desired results on guest comments, Unifocus and NPS Guest Surveys.
  • Partner with Directors and Human Resources for necessary employee training, development, discipline and staffing levels. Participate in management development training as offered through the Human Resources Department.
  • Work with and embrace Sustainability & Xanterra’s Fresh Forward initiatives.
  • Other duties as assigned.
Qualifications
  • Must be available to work nights, weekends and holidays on a floating schedule based on operational demands and weaknesses.
  • At least three years of high end – high volume, full service restaurant management experience.
  • Experience with and knowledge of all front of the house positions with the ability to quickly assess service situation(s) during the meal period(s).
  • Beer, Liquor and Wine knowledge is a must.
  • Experience managing the financial aspects of a restaurant
  • Ability to train and evaluate staff performance in a full-service restaurant.
  • Demonstrated positive leadership skills with the ability to drive employee engagement.
  • Strong interpersonal and conflict resolution skills.
  • Knowledge of wines, wine service, wine selling techniques and ability to pass knowledge on to staff.
  • Ability to pass ServSafe Manager course and TIPS training within 90 days of employment.
  • Competency using Outlook, Word and Excel.
  • Experience with computerized POS systems, draft system and advanced reservations systems.
