Description

The following is a composite representation of the actual positions which make up this classification. It is not intended to cover all possible job requirements or job factors which, if applicable, are included by reference. Lines of supervision and reporting are as shown on an organizational chart. A. Position Definition & Summary:

Provides overall management and leadership to the Dietary Department. Works in conjunction with Director of Food Services to ensure timely ordering of supplies and compliance with budgetary guidelines. Assists with preparing and cooking of food for youth. Prepares and delivers nourishments for special diets. Prepares for special functions as requested. Serves meals as needed. Responsible for dishes and maintaining a clean and sanitary work area. Responsible for putting away grocery order and rotating stock accordingly. Responsible for overall cleanliness of the walk-ins and storerooms.

B. Position Expectations and Essential Functions:

  • Prepares and serves meals to youth, visitors and personnel maintaining high standards of safety and sanitation in preparation and food handling areas.
  • Understands and uses the approved dietary manual in food preparation.
  • Properly stores and rotates daily and weekly grocery delivery.
  • Properly stores leftover foods according to policies and procedures of the facility.
  • Participates in maintaining the dietary area as a safe and sanitary area according to daily and weekly cleaning schedules.
  • Communicates professionally with youth.
  • Completes all appropriate forms maintaining compliance with the policies and procedures of the facility.
  • Participates in scheduled in-services and other appropriate training activities.
  • Utilizes supervisory feedback to improve performance.
  • Responsible for cleaning of dishes and equipment according to prescribed procedures.
  • Assists in serving therapeutic diets to appropriate youth assuring compliance with physician orders.
  • Performs other duties as assigned.
  • Completes dietary schedule in advance.
  • Completes purchase order process for purchasing of all food and supplies.
  • Maintains budget compliance related to food service department.
  • Ensures that quarterly health inspections are completed with A rating upheld.
  • Maintains all related documentation for food services in compliance with state and federal guidelines.
    • Maintains attendance and punctuality.
    • Effectively implements and consistently applies the programs Positive Performance System (PPS) / Behavior Management System (BMS).

    • Provides oversight to the PPS / BMS system to ensure that the rewards and consequences are distributed in a fair and consistent manner.
    • Detect, respond and prevent abuse of youth.
    • Supervision of Employees (2-5 depending on location).
  • Performs other duties as assigned by supervisor.

Qualifications


C. Position Requirements:

Education:

  • Possession of a certificate showing satisfactory completion of dietetic technician or dietetic assistant training approved by the American Dietetic Association.

OR

  • Possession of a certificate showing satisfactory completion of a program approved by the state agency of the state where the work site is located, which provided 90 or more hours of classroom instruction in food service supervision and one (1) year of fulltime experience as a supervisor in an institutional food service unit.

OR

  • Graduation from an accredited college or university with a major course of study in Dietetics, Nutrition, Food or Food Science, Institution Management, or Food Service Management and completion of a six to twelve month dietetic internship or a one (1) to two (2) year traineeship program accredited by the American Dietetic Association.

OR

  • Possession of a Master's degree in Dietetics, Nutrition, Food or Food Science, Institution Management, or Food Service Management from an accredited college or university and six months of fulltime experience in nutrition and/or food service management in a health care facility.

OR

  • Certification as a Registered Dietitian by the Commission on Dietetic Registration of the American Dietetic Association.

Other Requirements:

  • Must be 21 years of age or older.
  • Appointees will be required to possess a driver's license valid in the state where the work site is located only if the operation of a vehicle, rather than employee mobility, is necessary to perform the essential duties of the position.

D. Knowledge, Skills and Abilities:

  • Knowledge of principles and practices of dietetics and food management.
  • Knowledge of methods, materials, and appliances used in large scale food service units and of health and safety requirements for kitchen personnel.
  • Ability to organize and develop effective working procedures, to give suitable assignments and instruction to employees, and to give them needed advice and assistance when unusual and difficult problems arise.
  • Ability to check employees' work to see that proper procedures are followed, that reasonable standards of workmanship and output are maintained, and that desired objectives are achieved.
  • Ability to prepare suitable reports and to supervise the establishment and maintenance of essential records and files.
  • Ability to reason and make judgments and understand underlying principles such as planning and directing activities and instructing workers in a variety of duties concerned with serving meals according to sanitary standards.
  • Ability to learn to utilize various types of electronic and/or manual recording and information systems used by the agency, office, or related units.
  • Ability to remain calm and composed when dealing with difficult situations or people,
  • including with issues of confidentiality and employee relationships; ability to work under pressure
  • and meet inflexible deadlines; ability to work with constant interruptions.

E. Equipment Utilized

  • Ability to learn to utilize various types of electronic and/or manual recording and information systems used by the agency, office, or related units.

F. Physical Requirements & Work Environment:

  • Talking: Ability to express and exchange ideas via spoken word during activities in which they must convey details or important spoken instructions to others accurately, sometimes quickly and loudly. Hearing and Vision: Ability to perceive the nature of sounds with no less than 40 dB loss at Hz, 1000 Hz and 2000 Hz with or without correction. Ability to receive detailed information through oral communication. Work requires a minimum standard of visual acuity with or without correction that will enable employees to complete clerical tasks, and observe youth. Dexterity: Ability to stoop, kneel, crouch, reach, push, pull, lift, grasp, and be able to perceive the attributes of an object such as size, shape, and temperature. Movements frequently and regularly required using wrists, hands and/or fingers. Physical Strength: Ability to exert up to 50 pounds of force occasionally. Position is mostly standing and employee must be able to physically perform escalation matrix as defined in Protective Action Response. This may include, but is not limited to all countermoves and restraint techniques. Employee may be subject to temperature changes, but the employee is not substantially exposed to adverse environmental conditions as the work is predominantly inside. Language: Ability to write complex sentences, using proper punctuation, and ability to communicate in complex sentences using normal word order with present and past tenses. Processing and Reasoning: Ability to exercise self-control in potentially volatile situations such as in verbal and physical confrontations. Must be able to work and concentrate amidst distractions and noise. Ability to assist youth with problem solving and maintaining self-control in volatile situations.

While performing the duties of this position the employee is occasionally exposed to outside weather conditions as they relate to travel. Work environment may involve exposure to noise, dust, fumes, dangerous machinery, chemicals, body fluids, falling objects, and aggressive verbal and physical behavior from students and weather and temperature extremes.
