Directs and oversees all aspects of the organizations food, beverage and merchandise planning and service as they pertain to the Museums caf and bar services. Duties include menu planning and costs, preparation and presentation of food and drinks, caterer relationships, adherence to quality and safety standards, ordering, vendor preference, and management of food, beverage and merchandise inventory. Helps identify marketing opportunities to promote food and beverage products. Provides input for strategic decisions that affect the functional area of responsibility. Builds and monitors budgets. Capable of resolving issues arising from operations and requiring coordination with other departments.

Salary Range: $70K to $80K based on experience

Weekly Schedule: Friday Tuesday (subject to change as needed)

**Roles and responsibilities:**

* Responsible for the preparation, monitoring and reporting of the annual budget, revenue goals (short-term and long-term) and the expenses for the Food and Beverage department. Take corrective actions that may be needed.

* Directly responsible for managing food cost, beverage cost, merchandise cost and labor cost. Monitors market conditions that impact menu offerings, business volume, and profitability.

* Executes inventory control and calculation for monthly analysis and reconciliation. Identifies opportunities to control food and beverage costs and other expenses. Works closely with the CFO/COO and

* Accounting department on policies and procedures and the monthly inventory processes.

* Collaborates with Caf staff in the creation of menus to entice a variety of appetites including caf patrons and internal private events while incorporating a menu pricing structure that will support the bottom-line goals.

* Directs ordering quantities, timing of orders, receiving, invoice settlement and accuracy, storage temperatures and areas. Continually researches vendor and caterer possibilities, pricing, service, and evaluates vendor relationships to the benefit of the facility.

* Directs and organizes the Cafs retail merchandise and e-commerce operations to maximize profitability. Analyzes financial data and develops strategies around pricing, merchandising and promotions.

* Working closely with the Marketing department, manages merchandise and creates product lists, identifying roll-outs and phase-outs of products.

* Work with local and state inspectors (e.g., Department of Environmental

* Health and ABC) to ensure all food safety measures are met. Ensures compliance for the safe and legal service of alcoholic beverages.

* Creates and implements all policies and procedures for the Food & Beverage department including compliance of organizational standards relating to quality of products and services for the Caf and Bar Services.

* Performs detailed evaluation of all F&B equipment to ensure all items are in working order for all F&B functions.

* Approves points of sale and schedules for F&B department.

* Responsible for interviewing, hiring, training, coaching, planning, assigning, and directing work, evaluating performance, rewarding, and disciplining associates; addressing complaints and resolving problems.

Ensure all facilities and staff are in compliance with all health, safety, and training regulations.

* Other duties as assigned.

**Additional Duties & Responsibilities:**

* Primary duty is management and leadership, however may be required to fill in as a Caf Attendant, Kitchen Staff, Bartender, Barback, Dishwasher, etc. to relieve/back-up staff during peak periods or when short staffed.

* Implements and supports all Museum initiatives and programs requested by management.

* Works with other Museum departments to ensure exemplary customer service and adherence to policies and procedures.

* Maintains knowledge of other Museum and industry trends.

**Qualifications and Requirements:**

* Bachelors degree in food service/hospitality management preferred. A minimum of 7 years of progressive responsibility in food and beverage industry required.

* A minimum of 5 years of personnel management, preferably in a restaurant/hospitality/service industry.

* Advanced knowledge required of wines, distilled spirits, malted beverages, and service skills for high quality beverage service, modern buffet and reception set up, flow management, replenishment techniques and aesthetically pleasing presentation.

* Certification in safe alcohol service or TIPS preferred.

* Experience in resolving customer issues/complaints as well as overall excellent customer service required.

* Proficient in computer software including Microsoft Word and Excel.

* Proven ability to effectively build and foster a team environment.

* Ability to make decisions in a fast-paced environment.

* Must be of legal age to service alcoholic beverages.

* Ability to effectively communicate verbally and non-verbally with others.

* Ability to work with all personality types even in adverse situations.

* Ability to multi-task, prioritize, anticipate situations, and take quick action.

* Demonstrated commitment to customer service.

* Excellent problem solving/decision making skills.

* Ability to work independently and proactively in a fast-paced environment.

**Mental & Physical Requirements:**

* Ability to lift at 25 100 pounds.

* While performing the duties of the job, the employee may be required to walk or stand for long periods of time.

* Must be able to bend, climb, balance, reach, stoop, kneel, crouch or crawl without hindrance.

* Maintains a professional appearance appropriate to position and as per Museum policy.

* Ability to climb on step stool or ladder in order to complete elements of the job or facilitate maintenance issues.

* Fine motor skills.

* Must have valid driving license.

* Experience with a database driven POS required.

* Must possess valid food handler card or acquire within first 30 days of hiring.

* Intermediate Microsoft Office skills.

* Comfortable with public speaking and leading a small group.

* Comfortable dealing with a wide array of guests and customer service situations.

This is a full-time exempt position eligible for benefits such as health insurance, vacation, 14 paid holidays, free admission into all of Balboa Parks museums as well as free admission to the San Diego Zoo and Safari Park.
