Position: Prime 44 Restaurant Manager
Department: Food and Beverage
Primary Responsibilities:• Be highly passionate for Food & Wine and have a desire to create the ultimate dining experience
• Consistently manages the restaurant to a definitive Five Star level
• Ensures the Brand DNA is utilized in all areas of decision making and procedures
• Facilitates an environment of teamwork and communication with all departments within the resort
• Partners with the Chef de Cuisine to maintain extensive food knowledge of all staff
• Collaborates with the Beverage Director / Sommelier to maintain extensive beverage knowledge of all staff
• Maintains excellent employee satisfaction and relationships
• Maintains a daily discipline of inspecting service consistency and behaviors to the desired standard
• Maintains management stature as a leader in the competitive set of restaurants
Secondary Responsibilities:• Completes administrative duties including payroll, scheduling, daily correspondence
• Understands and communicates financial objectives and results
• Effectively responds to guest and staff needs
• Delegates efficiently to assistant dining room manager
Normal Working Hours:• 10 to 12 hours per day, weekends, holidays, and nights
In order to be successful in this position, the ideal candidate must meet the following criteria in addition to the Ten Essential Attributes for All Employees.
Past Work Experience Requirements:• Management experience with proven leadership qualities with quality driven Food and Beverage operation
• Sommelier or beverage related experience preferred
Educational Requirements:• Bachelor Degree in Hospitality preferred
• Sommelier certification preferred
Communication Skills Requirements:• Ability to communicate effectively with employees, colleagues and guests
• Excellent public speaking skills
Technical Requirements:
• Point of Sale Terminal experience
• Payroll software experience
• Reservation Software experience
• Computer skills including Microsoft Word, Excel, and Power Point
Reporting Structure:• Assistant Food and Beverage Director
Other Requirements:• Consistent demonstration of the Ten Essential Attributes, The Greenbrier mission statement, core values and F&B philosophy
