PURPOSE :

Manage F&B Department, including Legends, In-Room Dining, Bars, Banquets, and Kitchens.

RESPONSIBILITIES :

• Manage club concierge staff and operations.
• Coordinate with Front Desk for Amenities.
• Manage all restaurant and bar staff and F&B Outlet Supervisors when they are working scheduled shifts within restaurant or bar.
• Serve as Manager on Duty overseeing hotel operations when necessary.
• RVT Trainer.
• Order, inventory, and secure all alcoholic beverages.
• Order and inventory all Coca Cola products for banquet and staff use.
• Issue banquet bars pre-function, restock banquet bars throughout functions, and inventory banquet bars post function to turn in to banquet supervisors for billing.
• Make weekly schedule for all Legends employees. Communicate with the Banquet Director to staff any Legends employees in Banquets (when needed), as well as the F&B Outlet Supervisors.
• Create side work charts for servers, room service attendants, and bartenders.
• Issue disciplinary actions.
• Recommend terminations, after having thoroughly documented reasons for termination with HR.
• Hold Legends staff / F&B meetings.
• Work directly with Sales to acquire or create specialty alcoholic beverages for events, and / or trouble-shoot any RVT questions on events upcoming.
• Work directly with all beer, wine, and liquor reps in learning about and ordering new products on the market, with the approval of the F&B Director.
• Create specialty drink list, and craft beer list for Legends lounge, with the approval of the F&B Director.
• Break down cost, and assign prices to alcoholic beverages according to ABC quarterly with the F&B Director's approval.
• Communicate with guests regarding specialty reservations.
• Communicate with the F&B Director and Executive Chef about changes with all Legends menus, specialty and holiday buffets.
• Set up and decorate (if needed) holiday, and specialty buffets.
• Understand operations of FOH & BOH POS operations : programming employees, programming / removing items, reprinting guest checks, sales reports, p-mix reports, problem solving.
• View applications / resumes and recommend new employees. Joint interview with the F&B Director.
• Communicate with the F&B Director, Executive Chef, Banquet Director, and HR Director before holding staff meetings.
• Complete all steps and procedures prior to leaving for the day and bring any issues to the attention of the F&B Director.

QUALIFICATIONS :

3-5 years of experience as a Restaurant Manager
