Job Summary
We are looking for a Line Cook to run the meat station for our brand-new Barbecue spot. It’s a pretty important position since we are, after all, a meat palace. You will prep meats for the smoker, build our fantastic menu of specialty sammiches and cut meat and put it in a box. None of it’s hard, but it can get hectic, but that’s the business, isn’t it?
Duties and Responsibilities
  • Make sure your station is thoroughly prepped at the beginning of your shift. We do not prep on the fly. If you prep small, then “Smalls” will be your nickname, as in "Yer killin' me, Smalls." Don’t be a Smalls.
  • Prep your station at the end of your shift for the next person. That means the above should be pretty easy since someone did it for you. Always take care of the next person.
  • Learn our standards for presentation and adhere to them. The way something is built affects how it eats. Ever get an Italian hoagie with oil and vinegar and they put the dressings on the vegetation and not the bread??? Wrong, Wrong, WRONG!!!
  • Make sure you have adequate back up of preps. We make all kinds of things from scratch. Like bacon and beer cheese. If we don’t have sufficient back up, then make it!
  • Follow all food safety regulations. Keep the cold stuff cold and the hot stuff hot. And don’t be dirty.
  • Participate in daily kitchen opening and closing procedures. It’s a brand new space, keep it looking that way!
Qualifications
  • Previous experience in a similar role is required. This is not an entry level position.
  • ServeSafe or Food Handler’s Certification is helpful.
  • Advanced knowledge of culinary techniques and recipes. We make most stuff from scratch and don’t like to use “products.” We make our own bacon from fresh pork bellies.
  • Ability to remain calm and thrive under pressure.
  • Excellent time management skills. Work smarter.
  • Ability to meet the physical demands of the position, including standing for long periods and lifting up to 40 pounds.
