Beverage Director - NYC

Overview: The Beverage Manager controls the organization, management and administration of beverage operations across all of the New York City properties. This role will report directly to the NY leadership team: Managing Partners, Directors of Operations, and the VP of Beverage.

Job Description:

  • Responsible for the administration and planning of beverage programs to uphold company image and drive quality guest experiences.
  • Implementing operating policies for beverage controls in order to maximize service and desired profit levels.
  • Supports GM’s and AGM’s in achieving profit objectives and usage controls.
  • Weekly venue product audits.
  • Responsible for producing weekly cost of goods reports for each venue.
  • Create and manage ordering pars to ensure highest discounts for products.
  • Manage payroll for all beverage receivers and stockers. Set and achieve labor goals based on business projections.
  • Oversees Assistant General Managers in their development and understanding of beverage operations.
  • Menu product planning, product development for maximum market acceptance for taste, optimal cost, and pricing.
  • Competitive analysis of beverage prices in relation to competition.
  • Responsible for staff training and development for sales as they relate to beverage.
  • Participation and input towards Event activities with the Events team.
  • Responsible for implementation and maintenance of all department control procedures.
  • Ensure a professional attitude and proper business attire when on property.
  • Maintaining relationships with liquor representatives, brand ambassadors and liquor distribution companies
  • Interviewing, hiring, training, scheduling and coaching/disciplining bar staff
  • Maintaining bar quality assurance through staff quizzes, prep oversight, and individual bartender observation / coaching
  • Oversight over weekly ordering, product receiving, liquor receiving, monthly inventory (consistent high level use of craftable)
  • Ensuring proper coding / tracking of beverage purchases / costs
  • Variance analysis with an overall objective to lower staff turnover, increase staff knowledge, maintain program consistency, and increase beverage sales with a 14% overall cost objective in mind
  • Facilitate relationship with bar / beverage program operations and other FOH / BOH entities within the venues to ensure smooth operational workflows

Experience/Skills:

  • Previous Food & Beverage experience in a leadership role.
  • Ability to work well under pressure in a fast paced environment.
  • Ability to work cohesively as part of a team.
  • Strong interpersonal and problem solving abilities.
  • Must be organized, self-motivated, and proactive with a strong attention to detail.
  • Proficient with computers (Microsoft Products), POS and technology.
  • High proficiency with Food & Beverage Inventory systems such as Foodager, Bevager, or similar systems.

Physical Demands and Work Environment:

  • Must be able to stand, lift and bend for extended periods of time.
  • Must be able to bend and lift to 50 lbs.
  • Role may include job duties or tasks requiring repetitive motion.
  • Must be able to work and remain focused in a fast-paced and ever-changing environment.
  • Ability to work a flexible schedule inclusive of varying shifts such as days, evenings, weekends and holidays.
