Rooted Hospitality Group is Hiring a Kitchen Manager Near Westhampton, NY

Responsibilities: 
  • Supervising food prep and cooking including delegation of responsibilities. 
  • Ensuring food is stored and cooked at correct temperature by regulating temperature of ovens, broilers, grills, fryers, roasters, and other kitchen equipment. 
  • Ensuring freshness of food and ingredients by checking for quality, keeping track of old and new items, and rotating stock. 
  • Ordering, controlling, and managing inventory so that all necessary ingredients are stocked for service. 
  • Reviewing new applications, scheduling interviews, hiring new staff and providing training and mentorship to facilitate acclimation. 
  • Using projected sales to write a kitchen schedule, adjust the schedule based upon business flow, and analyze the schedule variance to meet a BOH budget.
  • Streamlining the kitchen processes to maintain prompt service times. 
  • Working with Leadership Team and other Chefs to develop and maintain the restaurant menu program. 
  • Setting regular cleaning standards for the kitchen and verifying that staff is maintaining sanitation levels. 
  • Ensuring usage of all kitchen checklists. 
  • Tracking kitchen finances to identify areas of potential waste. 
  • Conducting annual performance reviews to provide feedback for growth, opportunities for additional cross training, and determining eligibility for pay rate increase.
Be a Student of the Business: 
  • Know your market and purveyors 
  • Compare your operation to the best local operators 
  • Understand sanitation (OSHA logs, Temp logs, ServSafe Certifications, Health Department scores, etc.) 
  • Learn from all experiences and apply the lessons 
Lead Your Team: 
  • Ensure the highest product quality in ordering/receiving 
  • Precise execution through use of provided training material and recipes 
  • Drive all standards 
  • Maintain a clean and updated building 
  • Use daily profit tracking tools 
  • Look for better efficiency and productivity 
  • Learn/teach numbers inside and out; budget vs. actual 
Develop People:
  • Influence thinking/principles vs. controlling results 
  • Develop a staff that exudes confidence and friendliness 
  • Know your employees and be objective in evaluations 
  • Confront poor performance – reward and recognize good performance 
  • Question everything – promote an environment that embraces change 
  • Pass down the culture of excellence 
Requirements: 
  • Strong base of culinary knowledge 
  • Reliable and capable of working independently or following specific directives 
  • Positive attitude and work ethic 
  • Ability to work well under pressure with the ability to self-manage timelines and deadlines 
  • Excellent multi-tasking skills with strong attention to detail and follow-through 
  • Good judgment and strong sense of integrity 
  • Excellent organization skills and ability to be flexible with changing priorities 
  • Ability to communicate effectively and often 
  • Ability to lift 12 kg. 
  • Reasonable range of motion such as bending, stooping, standing, walking, stirring, lifting to complete physical tasks related to culinary responsibilities 
  • Passion and love for the food and hospitality industry 
  • Minimum of 3 years’ experience in high volume Kitchen Management position
