Job Summary:

  • Ensures Guest Service Standards are met consistently. Responsible for proper ordering for Martorano’s Restaurant inclusive of all food, beverages, supplies.

Supervisory Responsibilities:

  • Yes. Supervises two Assistant Managers.

Duties/Responsibilities:

  • Ensures Guest Service Standards are met consistently.
  • Ensures QSC Standards are met consistently.
  • Ensures all recipes are adhered to consistently.
  • Ensures proper staffing for forecasted volume and budgetary guidelines through proper training of supervisors.
  • Responsible for proper ordering for Admiral’s Steak and Seafood Restaurant inclusive of all food, beverages, supplies.
  • Ensures proper inventory par levels and monitors inventories and reports discrepancies to the VP of F&B.
  • Completes the end of period inventory and presents it to the Department Analyst.
  • Ensure timely and proper scheduling to meet budgeted labor costs.
  • Achieves proper food and liquor/ beverage costs consistent with budgeted expenses.
  • Administers and enforces departmental policies and performance standards.
  • Notifies team members and supervisors of changes in policies and procedures.
  • Works closely with Department Trainer to ensure all new hires are trained both with classroom and floor programs. Ensure all existing team members are attending follow up training sessions.
  • Communicates any problems or concerns to VP and other departments as needed.
  • Responsible for the efficient and timely recruitment and selection of applicants.
  • Efficiently and effectively communicates with departments to ensure proper communication by conducting and participating in departmental meetings
  • Responsible for achieving established P&L objectives.
  • Ensures all department files are in proper order in such a way that another manager could perform efficiently in the event of his/her absence.
  • Accountable to ensure the accuracy and thoroughness of departmental records and reports.
  • Consistently promotes the Casino through good will and positive attitude.
  • Ensures a maximum level of service and satisfaction throughout the restaurant.
  • Maintains high sanitation and safety standards meeting all required regulatory standards including but not limited to the Health Department, OSHA, FSLA, and Serv-Safe.
  • Ensures departmental compliance with applicable federal and state laws governing food & beverage.
  • Maintains sufficient materials and products in the work location.
  • Maintains security of products and areas assigned to the department.
  • Ensures FIFO rotation of products to provide the freshest product to our guests consistently.
  • Understands that this is a 24-hour responsibility and is accessible at all times inclusive of nights, weekends and holidays.
  • Maintains professional grooming and appearance and acts as a role model according to established policy.
  • Ensures that all Team Members are treated in a fair and consistent manner.
  • Performs any other duties as specified or assigned by the VP or any member of the Executive Management.
  • Works as equal partners with the Room Chef to effectively manage the venue and create a synergistic relationship between back and front of house
  • All other duties as assigned

Minimum Education and Experience Requirements:

  • Minimum five years experience as a fine dining style restaurant manager
  • Bartending and serving experience
  • A strategic thinker and creative problem solver who takes the initiative and ownership
  • A collaborative nature coupled with an enthusiastic positive outlook
  • Self-starter with a creative mind and a track record of putting ideas into practice and assessing results

Certifications, Licenses, and/or Registrations:

  • Gaming license/registration as required by jurisdiction(s).

Knowledge, Skills, and Abilities:

  • Excellent verbal and written communication skills.
  • Excellent organizational, analytical, and project management skills, with particular attention to quality and detail.
  • Excellent interpersonal and communication skills and the ability to work effectively with all levels of the organization.
  • Strong business acumen and understanding of the business drivers in the industry.
  • Demonstrates the ability to establish credibility and rapport with operating leaders.
  • Ability to analyze data, understand trends, and develop recommendations for action based on the analysis.

Physical Requirements:

  • Must be able to work while standing for hours at a time.
  • Must be able to lift up to 30 pounds at times.
  • Ability to work flexible shifts and days of the week, including holidays.
