Primary Responsibilities: As the Service Manager, you will play a pivotal role in overseeing the efficient flow of operations at Canteen, with a particular focus on building a bridge between the kitchen, bar, and service floor. Your responsibilities will extend beyond traditional managerial duties to encompass leadership, quality assurance, service excellence, compliance, and financial oversight.

Job Requirements:

Leadership

  • Be a leader in creating a positive work environment, hiring, training, scheduling, and managing a united service and kitchen.
  • Partner with the culinary team and director team to foster a collaborative and inspired work setting.
  • Clearly communicate and instruct the team in standards and steps of service to achieve consistent, high-quality, memorable guest experiences.

Expedition and Coordination:

  • Collaborate with kitchen and service staff to streamline food preparation and ensure timely delivery to guests.
  • Oversee the expediting process, maintaining quality and presentation standards.

Quality Assurance:

  • Conduct regular inspections of food and beverage items to guarantee adherence to established standards.
  • Address any discrepancies or issues in food quality promptly and effectively.

Service & Guest Satisfaction:

  • Respond to guest inquiries, proactively support service team members, and maintain a strong presence on the floor to anticipate and address issues.
  • Investigate and resolve guest concerns.
  • Collaborate with the service team to address guest feedback and concerns.
  • Work proactively to enhance the overall dining experience for guests.
  • Actively participate on the service floor to help engage guests, resolve issues before they arise, and help smooth out any problem areas.

Staff Training & Scheduling:

  • Train and mentor kitchen and service staff on efficient expediting procedures.
  • Foster a collaborative environment between kitchen and service teams.
  • Ensure the service team is well briefed on both food & beverage menus (including major allergens, modifications that can and cannot be made, and re-fire timelines).
  • Develop bi-weekly work schedules for bar and service teams.
  • Ensure optimal staffing levels to meet operational demands.
  • Create schedules that align with budgetary constraints, optimizing staff hours for cost efficiency.
  • Identify and implement cross-training opportunities for flexibility in schedule.

Financial Oversight:

  • Receive orders from vendors and oversee the procurement process, ensuring timely and quality ingredient deliveries.
  • Enter invoices into M3, maintaining accurate and organized financial records.
  • Execute daily cash handling procedures following SOP to ensure accurate recording, secure storage, and timely deposit of cash revenue.
  • Facilitate the daily recording and reconciliation of employee tips, ensuring accurate distribution and compliance with applicable labor laws.
  • Facilitate and participate in monthly beverage and food inventory.

Menu Updates:

  • Work with culinary team and Director of Hospitality Operations to ensure menu roll outs are timely, on trend with season, and within cost of good goals.
  • Communicate with Marketing Manager 2 weeks in advance of major menu edits.
  • Train staff on menu updates.

Inventory Management:

  • Monitor and manage food & beverage inventory to minimize waste and optimize freshness.
  • Coordinate with suppliers to ensure timely and quality ingredient deliveries.

Health Inspections:

  • Regularly communicate and build a positive relationship with the state health inspector.
  • Stay updated on health and safety regulations to ensure compliance.
  • Conduct regular training sessions for kitchen and serving staff on health and safety protocols.
  • Ensure all team members are knowledgeable about hygiene practices and food safety standards.
  • Develop and implement detailed plans for health inspections, outlining responsibilities and timelines.
  • Coordinate with relevant departments to address potential compliance issues in advance.
  • Act as the primary point of contact during health inspections, guiding the inspector through kitchen and dining areas.

Knowledge, Skills, and Abilities:

  • Proven experience in a food & beverage management role.
  • Thorough understanding of state health regulations and food safety standards.
  • Excellent communication and leadership skills.
  • Ability to plan and execute effective training programs.
  • Strong problem-solving abilities to address compliance issues promptly.

Physical & Mental Demands:

  • Willingness to periodically work longer or more irregular hours when needed.
  • Stress management: manages stress in a professional manner.
  • The employee frequently is required to use hands and fingers and must reach with hands and arms.
  • The noise level in the work environment is usually moderate, typical of a hotel/restaurant setting.

Requirements:

  • Proven experience in a similar role within the food and beverage industry.
  • Strong knowledge of kitchen operations, expediting processes, and food safety standards.
  • Excellent communication and leadership skills.
  • Detail-oriented with a commitment to maintaining high-quality standards.
  • Ability to work in a high-paced environment and handle pressure gracefully.
