Provide safe, tasteful and appealing food to our guests by utilizing proper preparation methods. Accurately cook food to guests request.

Able to cook meats, fish, vegetables, soups, and sauces, and prepare and portion food products prior to cooking. Perform final plate preparation including plating and garnishing of cooked items.

Principal Duties and Responsibilities

• Follows HACCP guidelines regarding rotation and temperature control of food products.
• Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment.
• Understands and complies consistently with our standard portion sizes, recipes, cooking methods, quality standards and kitchen rules, policies and procedures.
• Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period by planning ahead and organizing the work area.
• Maintains a clean and organized work station area including but not limited to tables, shelves, walls, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range, refrigeration equipment, and floors.
• Uses correctly and follows safe operations of kitchen equipment, provides continuous cleaning and sanitization of same equipment.
• Prepares item for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and / or marinating.
• Prepares and cooks all menu items.
• Follows proper plate presentation and garnish set up for all dishes.
• Assists in food prep assignments during off-peak periods as needed, and is responsible for cleaning and sanitizing all kitchen equipment.
• Assists with kitchen deliveries.
• Assists in opening / closing procedures for the kitchen.
• Provides friendly and efficient Team Member and guest service in the kitchen and food service counters.
• Assists guests and Team Members as needed to ensure the smooth and efficient operation of the restaurant / banquet as directed by the manager or immediate supervisor.
• Is compliant with all local, state and federal regulations and Tribal MICS.
• Attends all scheduled Team Member meetings and brings suggestions for improvement.
• Participates in all other duties requested by the F&B Director, Manager or Supervisor.

Job Qualifications

• High school diploma or equivalent is preferred.
• A minimum of 2 years training and / or experience in kitchen preparation and cooking.
• Basic computer experience is preferred.
• Ability to uphold complete confidentiality is required.
• Must display professionalism when representing PCCH.
• Must work well with people; possess excellent customer service skills and sensitivity to diverse cultures.
• Must possess strong verbal and written communications skills.
• Ability to maintain a professional demeanor in stressful situations is necessary.
• Ability to maintain current Serve Safe Certification.
