Job DescriptionPOSITION TITLE: FOOD SERVICES FIELD SUPERVISOR REPORTS TO: FOOD SERVICES COORDINATOR
OVERTIME STATUS: EXEMPT PAY GRADE: 374
JOB SUMMARY:Performs difficult technical and responsible administrative work monitoring and supervising food service activities; does related work as required.
ESSENTIAL DUTIES:
  • Supervising food services field operations; training food service employees.
  • Coordinates, monitors, oversees and participates as required in the work of other employees engaged in the preparation, cooking and serving of food.
  • Plans menus and insures that foodstuffs are cooked in quantities according to menus, good dietary principles and number of persons served.
  • Prepares and maintains computerized menus.
  • Inspects kitchen equipment, storeroom, foods and employees to maintain proper sanitation and operation.
  • Ensures that sufficient and appropriate staff is available in each school.
  • Instructs other employees in the operation of equipment and utensils and in the preparation, cooking and serving of food in accordance with good dietary principles and food service methodology.
  • Oversees and coordinates the cleaning and maintenance of culinary utensils, equipment and working areas.
  • Trains new cafeteria managers, conducts in-service for all food service employees.
  • Assists with special functions.
  • Ensures compliance with State and Federal requirements and policies.
  • Conducts nutritional analysis.
  • Carry work-issued cell phone during entire work shift. Answer and respond to all after-hours calls while on duty from Multra-Guard, PPS employees, and Facilities Staff members when on-call.
  • Performs related tasks as required.
JOB SPECIFICATIONS/PHYSICAL REQUIREMENTS: Thorough knowledge of the preparation, cooking and serving of food in large quantities; through knowledge of food quality and values, and of nutritional and economical substitutions within food groups with a preference for some knowledge of special dietary requirements; thorough knowledge of kitchen sanitation and safety measures used in food handling and in the operation; cleaning and care of utensils; equipment and work areas; thorough knowledge of USDA rules and regulations; ability to plan and supervise the work of subordinate employees as assigned; ability to prepare reports; ability to train subordinates in the preparation, cooking and serving of food; general knowledge of computer operations. Thorough knowledge of HACCP requirements and implementation.
This is medium work requiring the exertion of up to 50 pounds of force occasionally and up to 20 pounds of force frequently to move objects, and some light work requiring the exertion of up to 20 pounds of force occasionally, up to 10 pounds of force frequently, and a negligible amount of force constantly to move objects; work requires stooping, reaching, standing, walking, and lifting, vocal communication is required for expressing or exchanging ideas by means of the spoken work; hearing is required to perceive information at normal spoken word levels; visual acuity is required for preparing and analyzing written or computer data, determining the accuracy and thoroughness of work, and observing general surroundings and activities; the worker is subject to inside and outside environmental conditions, and extreme heat.
EDUCATION AND EXPERIENCE: Bachelor's degree from an accredited college or university with emphasis on foods, nutrition or institutional management. Five (5) years experience in Food Services Supervisory Capacity.
