Otium in Downtown Los Angeles is looking for candidates to fill our pastry production position! Chef Timothy Hollingsworth, formerly of The French Laundry, is searching for qualified and dedicated staff for his team at Otium.

Hollingsworth is focused on compiling a seasoned team of culinary and service-minded professionals to create a dining experience like no other in the city. Otium strips away the formalities of dining while focusing on the quality of food, warm service, and relaxed atmosphere. Otium is a social restaurant, with a dramatic open kitchen and rooftop gardens, focusing on a sophisticated yet rustic approach to cooking with elegant, vibrant, and seasonal flavors.

Job Summary

Oversee production and preparation of high quality house-made pasta, as well as other house-made breads, crackers and dough related products.

Responsibilities

  • Oversee the production of various types of pasta dishes, including fresh and dried pasta, filled pasta, and specialty pasta dishes.
  • Ensure consistency and quality in all pasta preparations, adhering to established recipes and standards.
  • Work closely with the culinary team to develop new pasta recipes and seasonal menu items.
  • Manage inventory levels for pasta ingredients and supplies, placing orders with a Chef as needed to maintain stock levels.
  • Maintain a clean and organized pasta production area, adhering to sanitation and hygiene standards.
Requirements
  • Strong culinary skills. At least 3 years culinary experience, but no pasta production experience needed, only an eagerness and openness to learn.
  • Excellent organizational and time management skills.
  • Emphasis on strong cleanliness standards.
  • Ability to work effectively in a fast-paced environment and manage multiple tasks simultaneously.
  • Food Handlers Certificate Required
  • Spanish Speaking Bilingual is a plus.
