**Description**
MEAL PREPARATION
o Must be able to read and follow recipes
o Check stock for menus two days in advance
o Pre- prep all possible items
o Delegate prep assignments to utility person as needed
o Properly cook all hot items to be ready at correct time
o Assure serving staff understands correct holding and serving of menu items
SKILLS
o Know how to use, clean, and maintain all kitchen equipment
o Understand proper product storage
o Know and use food safety and sanitation principles
o Must be self motivated, able to work and finish assignments without constant supervision
o Be aware of kitchen safety procedures, location of fire extinguishers, emergency exits, and first aid kit.
OTHER DUTIES
o Read invoices, check in, and receive product deliveries properly
o Answer phone and deal with food needs for serving kitchens
o Direct and oversee utility cleaning assignments
o Assure that all deliveries are put away completely and correctly
o Communicate any and all stocking or personnel problems, incidents, or injuries to supervisor by note or phone
o Close kitchen at end of shift: clean, floors mopped, dish machine drained & cleaned, all equipment & lights turned off, door locked
