Baleen Restaurant Supervisor | Full Time - $26.00/hour

Department: Food & Beverage – Baleen Restaurant @ LaPlaya Beach & Golf Resort

Reports to: Director of Restaurant Outlets & Director of Food and Beverage

Key Relationships:

JOB OVERVIEW

Responsible for the management of all aspects and functions of the outdoor bar outlets, in accordance with hotel standards. Directs, implements and maintains a service and management philosophy which serves as a guide to respective staff.

Requirements

ESSENTIAL JOB FUNCTIONS

1. Anticipate guest's/member's needs, respond promptly and acknowledge all guests, however busy and whatever time of day.

2. Maintain positive guest relations at all times.

3. Be familiar with all hotel services/features and local attractions/activities to respond to guest inquiries accurately.

4. Resolve guest complaints, ensuring guest satisfaction.

5. Monitor and maintain cleanliness, sanitation and organization of assigned work areas.

6. Maintain complete knowledge of:

a) All liquor brands, beers and non-alcoholic selections available in outlets.

b) All menu items.

c) The particular characteristics and description of every wine/champagne by the glass and major wines on the wine list.

d) Designated glassware and garnishes for drinks. All bar menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation and prices.

e) Daily specials, 86'd items.

f) Bar outlet layouts, table/seat/station numbers, proper table set-ups, room capacity, hours of operation, price range and dress code and manual system procedures.

g) Daily house count, arrivals/departures, VIPs.

h) Scheduled in-house group activities, locations and times.

i) Correct maintenance and use of equipment.

j) All department policies/service procedures.

k) Maintain complete knowledge and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving.
