Title: Military Food Production Specialist
Note: This is NOT a cooking position
Location: Portsmouth, NH
Salary Range: $50,000-$55,000/year
We are currently hiring for a full-time, salaried Military Food Production Specialist.
About the role:
The Military Production Specialist plays a crucial role for the culinary team. The primary focus
of this role is to fulfill our 24/7/365 no-fail mission to supply in-flight meals to US Military
troops as part of our contractual obligation to the DoD CRAF (Department of Defense Civil
Reserve Air Fleet) Charter Airlift Services.
This position reports directly to both the Managing Director, and Director of Operations, with a
dotted-line report to the Aviation Catering Manager.
Duties & Responsibilities:
Build each order to exact specifications
Pack aircraft galley carts per individual orders
Ensure all orders are completed in a timely and precise manner
Collaborate both internally and externally to ensure transparency and resolve issues
regarding order specifics, timing, accuracy and aircraft delivery
Submit timely requisitions for product procurement
Maintain product par levels (prepared meal inventory) to support both current, upcoming,
and short-notice demands
Maintain an accurate inventory of necessary products and meals
Assist with additional kitchen duties during order downtimes to support other revenue
streams within our company
Comply with all DoD, FDA (Food and Drug Administration), and local health codes and
inspection requirements
Contribute to maintaining overall facility standards of cleanliness
Required Skills:
High School Diploma or GED equivalent
Exceptional attention to detail
Ability to accurately count and keep track of multiple meal production lines
High level of communication skills – both written and orally
Ability to remain adaptable to the ever-changing needs of the US Military – and work a
flexible schedule, to include on-call support
Ability to work quickly and consistently
Ability to proactively plan and manage time independently
Proficiency with Microsoft Office Suite
Desired Qualifications:
Prior culinary experience/formal training is preferred but not necessary
College Degree in hospitality/related field or 2-3yrs of culinary or production experience
Equivalent Military or civilian work experience preferred
Serve Safe Food Handler or Manager certification
Physical Requirements:
Ability to push, pull, lift 50 lbs.
Ability to stand for long periods of time
Ability to stoop, bend, kneel
Ability to perform repetitive work
Ability to use standard kitchen equipment – slicer, dish machine, knives, ovens
Must be able to pass a background check and drug screen
