JOB SUMMARY:

The Food & Beverage Director is responsible for the operational and financial performance of the food & beverage departments which includes both restaurant and banquet departments. Areas of responsibility include guest service, sales, accounting/budgeting, asset protection, inventory control and various human resources responsibilities. The Food & Beverage Director directs all operations in alignment with the direction of the General Manager, brand standards, and local, state and federal regulations. Additional responsibilities include meeting or exceeding the department’s financial goals, short and long term planning, and assistance in the preparation of departmental budgets, marketing and business plans.

SKILLS & KNOWLEDGE:

1. Must have the ability to provide professional and courteous guest service.

2. Must have good time management skills and the ability to work with minimal supervision.

3. Must have good planning and organizational skills, the ability to multitask and strong attention to detail.

4. Must have the ability to understand and follow verbal/written instructions and communicate both verbally and in writing. Must have demonstrated business communication skills.

5. Must have the ability to maintain a positive and professional attitude when handling guest situations.

6. Must have strong interpersonal leadership skills, the ability to delegate tasks, and set goals.

7. Must have a working knowledge of computers, math skills and the ability to handle monetary transactions.

8. High school diploma or equivalent required; associate degree preferred.

9. 3-5 years of Food & Beverage Management or related experience required.

ESSENTIAL FUNCTIONS:

1. Assists all guests in a professional and courteous manner.

2. Performs job duties and responsibilities in a cost effective manner and within budgetary guidelines.

3. Responds appropriately to guest complaints, solicits feedback and builds relationships as a means to continuously improve guest satisfaction. Investigates guest complaints and promptly resolves all problems, both short-term and long-term.

4. Develops and implements new market-leading concepts, menus and promotional activities pertaining to food and beverage in collaboration with Sales and Marketing.

5. Reviews and analyzes cost, financial, and operations reports to determine operating requirements for the revenue and operating costs. Maintains labor and product costs within budget limits. Approves equipment, materials and supply purchases.

6. Develops and implements budget and strategic work plans, including capital projects. Recommends capital expenditures for acquisition of equipment, which would increase the efficiency and safety of operations.

7. Works with the management team in formulating administrative, safety, and operational policies and procedures. Enforces compliance within the food & beverage departments. Reviews standard operating procedures and recommends and approves revisions.

8. Ensures that correct and consistent service techniques for various meal periods are demonstrated by all associates.

9. Conducts routine inspections of all food & beverage facilities to ensure guest service and food quality standards are met, as well as safety, maintenance and cleanliness standards.

10. Completes and/or oversees all food & beverage inventories, purchasing, and asset controls according to established policies and procedures.

11. Communicates on a regular basis with the management team. Attends and contributes to required meetings.

12. Thoroughly communicates with food & beverage associates through daily communication and regular meetings.

13. Interviews and selects qualified associates for hire. Provides effective orientation, training, coaching, evaluation, recognition, and motivation to associates. Provides associates with the necessary tools to perform their jobs.

14. Identifies and communicates performance expectations as well as policies and procedures to associates. Enforces company policies and administers corrective action as necessary, in a consistent and effective manner.

15. Works with Human Resources on all employee relations, performance management, leave of absence and worker’s compensation concerns. Promptly responds to all requests from Human Resources regarding personnel matters.

16. Ensures and promotes a professional work environment free from inappropriate and offensive conduct of any type.

17. Understands, promotes and applies all facility safety and security procedures as required to maintain a safe and secure environment for employees and guests.

18. Keeps supervisor promptly and fully informed of all problems or unusual matters of significance coming to his/her attention so prompt corrective action can be taken.

19. Performs all other duties as assigned.
