Summary of Position: Help to be responsible for all food production including that used for conventions, banquet functions, and other programs. Aid in developing menus, food purchase specifications, and recipes. Help to supervise staff. Maintain the highest professional food quality and sanitation standards.

Duties: include, but may not be limited to the following:

General Duties to Manage Kitchen :

  • Maintain and ensure a safe and hygienic kitchen environment
  • Compliance with food labeling and temperature controls
  • Make periodic and regular inspections of units to observe the quality of food preparation and service; food appearance; and cleanliness and sanitation of production and service areas, equipment, and employee appearance.
  • Help to develop recipes and portion specifications in accordance with consumer tastes, nutritional needs, product specifications, ease of preparation, and established procedures and budgetary constraints
  • Prepares as requested in areas such as plate presentation, special function menu planning, and the design of new service areas.
  • Maintain kitchen equipment and ensure that all equipotent is running and meets the company’s standards. Report all issues with equipment to the Assistant General Manager.
  • Help to hire and train kitchen staff to set prices for food items.
  • Ability to apply basic knife skills
  • Maintained menu knowledge and food presentation
  • Effectively communicate with management and staff
  • Performed all duties as deemed necessary for the success of the team.
  • Completed the calculation of the monthly meal count, and maintained cleanliness of the entire kitchen, equipment, and operating machinery.
  • Accommodating food orders from café
  • Prepare any foods orders from the café such as cookies, pizza, etc, upon request from the cafe

Customer Services

  • Accommodating special needs & requests made by the guests
  • Finding reasonable resolutions to satisfy all guest complaints regarding foods by communicating with the dining manager
  • Presenting to guests who have any questions or issues
  • Addressing concerns with upper management related to any issues with foods.

Other Duties:

  • Attending groups’ pre-con meeting requested by meeting planner for menu review
  • Attend weekly Operations Meeting
  • Any other duties assigned by the Executive Chef
  • Work 6 days based on business needs
