JOB SUMMARY:

The Prep/Dish Person is responsible for the preparation of all grilled, deep fried and cold pantry items, in addition to all breakfast items. Ensures that food quality, and presentation meets Café standards prior to serving customers and employees while maintaining a sanitary work environment in the kitchen. All functions will be performed within the guidelines of the Coyote Valley Casino policies and procedures, Internal Control Standards and objectives, and in accordance with the Mission, Vision and Value Statement of the Coyote Valley Casino.

ESSENTIAL FUNCTIONS AND RESPONSIBILITIES include the following. Other duties may be assigned:

1. Must be in total compliance with established approved policies, procedures, and accepted practices of a class (A) food operation.

2. Responsible for proper set up of cooking area in preparation for assigned shift menu requirements.

3. Prepare daily shift items as denoted by prep lists utilizing a par system.

4. Ensure sanitary ware washing as business demands. Also responsible for kitchen cleanliness and weekly “deep-cleaning” procedures.

5. Rotates stock in coolers and freezers. Assures proper sanitary handling and condition of all food.

6. Ensures that food storage on the station is carried out in accordance with restaurant standards.

7. Informs Café Kitchen Supervisor of all supply needs and will thoroughly inventory supplies, food and menu requirements daily.

8. Must consistently demonstrate a high level of customer service to customers and employees, and represent the casino in a friendly and professional manner.

9. Insures all equipment is in working order, performing regular frequent inspections.

10. Maintain all food preparation areas in a thorough sanitary condition assuring compliance with all health code standards.

11. Must be able to work well with Co-Workers/Supervisors/Managers.

12. May be asked to perform various duties as assigned by the Supervisor or Manager.

13. Must maintain a good attendance record.

QUALIFICATIONS/REQUIREMENTS:

Education/Experience:

1. High School Diploma or GED equivalent. * Not necessary but recommended.

2. Basic knowledge of food preparation techniques.

3. Prior experience in a kitchen environment preferred.

Language Skills:

1. Ability to communicate effectively both written and orally.

Reasoning Ability:

1. Must have the ability to deal effectively and interact well with the customers and employees.

2. Must have the ability to resolve problems/conflicts in a diplomatic and tactful manner.

Physical Demands:

The physical demands described here are representative of those that must be met by an Employee to successfully perform the essential functions of the job. The Employee is also required to be on his/her feet for long periods of time by carrying food orders from the restaurant to the tables throughout the Bingo Hall. The employee is also required to bend and reach with hands and arms.

Work Environment:

The work environment characteristics described here are representative of those an Employee encounters while performing the essential functions of this job. The noise level in the work environment is usually moderate loud. When on the casino floor, the noise levels increase to loud. Must be able to work in an intense environment where a high degree of concentration is necessary to perform the required job duties.

Other:

1. Must be able to be approved for and maintain a valid gaming license.
