SUMMARY
Responsible for ensuring all china and glassware is cleaned efficiently and promptly. Provide all facets of the dining venue with silver and dishware on a continual basis. Performs deep-cleaning duties as assigned by culinary management. Responsible for achieving all standards for basic food preparation and cooking as assigned.
ESSENTIAL JOB DUTIES AND RESPONSIBILITIES
- Ensures compliance to standards set by management in scraping, racking, stacking, and washing of china, glass and silver.
- Keeps work area clean and sanitary and complies with standards of health, safety, and sanitation.
- Maintains knowledge of sanitation, dishwashing, maintenance, and safety standards.
- Works with Barbacks ensuring cleanliness and hygiene of work area, floors, tabletops, and food and bar equipment are in accordance with casino standards.
- Performs detailed cleaning of kitchen equipment as assigned and performs scheduled preventive maintenance cleaning.
- Understands the use of proper chemicals on property (SDS).
- Cleans walls and ceiling tiles, mops and sweeps kitchen and service areas and removes trash.
- Maintains a culinary work station when required and prepares, seasons, finishes, and garnishes food as assigned by culinary management.
- Follows all recipes, specs, and control procedures.
- Assists with guest requests when needed.
- Performs proper receiving, thawing, and storage in correct location, proportioning prep area sanitation, heating and holding, and re-thermalization (including sauces, soups, salad bar items, lunch, dinner, and produce).
REPORTING LINE
You will report directly to the Sous Chef and then the Executive Sous Chef.
QUALIFICATION REQUIREMENTS
- Must have excellent communication skills, be polite, and present a neat appearance at all times.
- The ability to work with others as a team in an efficient manner.
- The ability to apply common sense reasoning to variety of situations
- Proven experience providing high level of guest service
- The ability to add and subtract two-digit numbers and to multiply and divide
- The ability to read, and comprehend simple instructions, short correspondence, and memos in English
- Ability to write simple correspondence.
- Ability to perform basic math skills: addition, subtraction, division and multiplication.
- The availability to work all shifts.
- Ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions.
- Ability to deal with problems involving a few concrete variables in standardized situations.
- The ability to work in a fast–paced environment and stressful situations.
- Must be at least 18 years old.
- Must be able to pass a background investigation and obtain and maintain all work cards as required by the company.
- The ability to verify the right to work in the United States.
EDUCATIONAL AND/OR EXPERIENCE
High School Diploma or equivalent preferred.
PHYSICAL DEMANDS
Ability to stand, walk, and move throughout the property for prolonged periods of time. Ability to push, pull, bend, reach, squat, kneel, crawl, twist, sit, climb, balance, carry and lift to 50 lbs occasionally required to lift 75 lbs. Ability to use hands handle, or feel objects, reach with hands and arms or hear. Employee is occasionally required to reach with hands and arms, and to sit, climb or balance, stoop, kneel, crouch or bend.
Specific vision abilities required by this job include close vision, distance vision, peripheral vision, depth perception and the ability to adjust focus. Constant use of hearing, speech, vision (including distinguishing between shades of color), radios, and tools or equipment requiring a high degree of dexterity.
WORK ENVIRONMENT
The employee regularly works around mechanical moving parts.
The employee’s work environment may, at times, be very warm or very cold. The work environment includes moderate exposure to slippery work surfaces and greasy areas.
The noise level in the work environment is usually moderate.
