Position: Head Bread Baker

Overview:
Brown Bee Coffee, an upcoming café and bakery nestled on the picturesque Benefit Street in Providence, RI, is seeking a skilled and passionate Head Bread Baker to lead its artisanal bread program. The ideal candidate will have a deep understanding of bread-making techniques, a creative approach to recipe development, and a commitment to delivering high-quality baked goods that delight our customers.

Responsibilities:

• Bread Menu Development: Develop and curate a diverse menu of artisanal breads that align with the café's aesthetic and customer preferences.
• Recipe Creation and Optimization: Create, adapt, and refine bread recipes to ensure consistency, quality, and flavor.
• Baking Operations: Oversee all aspects of the bread-baking process, including mixing, shaping, proofing, and baking, while maintaining high standards of cleanliness and food safety.
• Ingredient Sourcing: Collaborate with suppliers to source high-quality ingredients, including flour, grains, seeds, and other specialty items.
• Equipment Maintenance: Ensure that all baking equipment is properly maintained and calibrated for optimal performance.
• Team Leadership: Train, mentor, and supervise bakery staff to uphold standards of excellence in bread production and customer service.
• Quality Control: Implement quality control measures to monitor the freshness, texture, and flavor of baked goods, and address any issues promptly.
• Inventory Management: Manage inventory levels of baking supplies and ingredients to minimize waste and ensure sufficient stock for daily operations.
• Menu Innovation: Stay updated on industry trends and innovative baking techniques to continually evolve and enhance the bread menu.
• Collaboration: Collaborate with other kitchen staff and management to coordinate menu offerings and maintain a cohesive culinary vision for the café.

Qualifications:

• Proven experience as a professional bread baker, with a minimum of 3 years in a similar role.
• Comprehensive knowledge of bread-making techniques, including fermentation, shaping, and baking.
• Strong understanding of ingredient functionality and the ability to develop recipes from scratch.
• Excellent organizational and time-management skills, with the ability to multitask in a fast-paced environment.
• Leadership abilities, with experience in training and supervising bakery staff.
• Attention to detail and a commitment to upholding high standards of quality and consistency.
• Effective communication skills and the ability to work collaboratively with a diverse team.
• Flexibility to work early mornings, evenings, weekends, and holidays as needed.
