BRASS and the TUSK BAR, new food and beverage concepts in the Evelyn Hotel in Flatiron/ Nomad (opening this fall), is seeking an experienced restaurant professional to oversee the restaurant’s bar operations with exemplary hospitality, grace, thoroughness, efficiency, diligence and style.

The Head Bartender will report to the General Manager.

Areas of Responsibility & Development:

Inventory Management

• Maintain and manage inventory 
• Accurately account for all of the Bar’s ordering and invoicing.
• Maintain exemplary Cost of Goods Sold.

Service Management

• Staff, train and retain team members for the Bar who value the established service philosophy, have a diligent work ethic and are committed to high standards of performance.
• Train new team members in accordance with existing company operational standards, including maintaining high levels of food, wine and spirits knowledge
• Maintain Bar cleanliness and organization.
• Monitor the Bar Service Team’s performance and menu knowledge.
• Create and uphold a Daily and/or Weekly Agenda / Focus.
• Lead a bi-monthly Bar Meeting outlining the overall Agenda / Focus.

Cocktail Program Management

• Create new cocktail menus.
• Coordinate implementation of seasonal cocktail program.
• Ensure consistent quality of cocktail output.
• Maintain already stellar performance in Cocktail Program Management.

Revenue / Sales Management

• Develop relationships with suppliers and brand managers.
• Coordinate arranged promotional spends from supporting brands.
• Monitor bar revenue across specific categories
