About the Role: As our Sushi Cook, you'll be the mastermind behind our sushi creations. From basic rolls to specialty delights, you'll showcase your skills in precision preparation and expert fish slicing. Your knack for innovation will shine as you collaborate with our team to introduce new menu items and ensure every dish meets our high standards.

What You'll Do:

Food Preparation:

  • Meticulously craft basic rolls, specialty rolls, and nigiris to exacting standards, showcasing precision in every creation.
  • Demonstrate expertise in slicing and preparing fish for sashimi, ensuring an unparalleled commitment to quality and taste.
  • Master the art of sushi rice preparation, adhering to company standards and emphasizing texture and flavor balance.
  • Skillfully craft mixes, sauces, and perform daily preparations for the designated station.

Cooking:

  • Execute high-volume production of diverse dishes while upholding stringent quality standards.
  • Conduct regular inventory checks for food supplies and other essentials.
  • Proactively replenish service lines as required, maintaining an organized and well-prepared workstation for subsequent shifts.

Organization and Cleanliness:

  • Uphold impeccable hygiene standards in accordance with Department of Health (DOH) guidelines.
  • Ensure a pristine work environment, preventing any risk of food contamination.
  • Implement rigorous sterilization protocols for all utensils, instruments, and equipment before each use.
  • Exercise meticulous attention to detail in managing food stock to fulfill orders efficiently.

Collaboration:

  • Collaborate seamlessly with front-of-house staff to ensure meticulous preparation, accommodating special requests and adhering to dietary considerations.
  • Foster open communication within the kitchen team, relaying specific customer preferences and modifications for a cohesive workflow.

Quality Control:

  • Exhibit mastery in the precision cutting, slicing, and filleting of various fish types.
  • Conduct rigorous inspections of fruits, vegetables, and fish, promptly informing the Executive Sushi Chef or Executive Chef any substandard quality.

Adaptability:

  • Thrive in a high-volume environment, consistently delivering quality in every sushi roll production.
  • Contribute innovatively to the creation of new sushi recipes and menu items, showcasing adaptability and creativity.

Compliance:

  • Strictly adhere to food safety and hygiene standards, ensuring uncompromising compliance.
  • Maintain vigilant oversight on the quality of ingredients, promptly communicating any deviations from standards.
