ASM Global-SMG is Hiring a Food and Beverage Operations Manager Near Knoxville, TN
This position is responsible to assist in the daily management of the Food and Beverage Department at the Knoxville Civic Auditorium and Coliseum (KCAC) and Chilhowee Park and Exposition Center (CPEC) to include hiring, staffing, training, cash room management, concessions, mobile carts, bar services, general event and backstage catering, culinary, catering sales, menu development, ordering, inventory, financials, reporting, budgeting & forecasting. The Food & Beverage Operations Manager directs and coordinates the entire food and beverage operation by performing the following duties personally or through subordinate supervisors. Serves as the direct Supervisor for F&B staff and fulfill the role of the Assistant Food & Beverage Director in his/her absence. Essential Duties and Responsibilities Include the following. Other duties may be assigned. Aid in the daily management of the Food & Beverage departmental operations and personnel. Ensure proper recruiting, hiring, training, and retention of all Food & Beverage Attendants, Cashiers, Bartenders, Runners, and Cooks in accordance with ASM HR Policy, Procedures and Labor Regulations under the supervision of the Assistant Food & Beverage Director. Works with local non-profits for staffing of concessions points-of-sale. Requires hands on management and support of employees during the service of events, as well as considerable interaction with clients and guests. Markets Food and Beverage services to clients. Implements Food and Beverage controls. Fosters and maintains positive client relations. Supervises Food and Beverage operations during events to ensure client satisfaction. Creates food and beverage orders to determine sufficient food and bar inventory items are ordered weekly. Maintains POS system inventory database. Works cooperatively with ASM Knoxville Executive Chef, Catering, and Assistant Food & Beverage Director in support for needed products and concepts for KCAC and CPEC. Purchases and distributes all products to concessions outlets throughout the venues. Maintains cost and quality control standards. Inspects and tastes prepared foods to maintain quality standards and sanitation regulations. Controls spoilage & cost of sales. Run stand inventory and per capita reports for each event as well as ongoing fiscal reporting. Manage daily concessions food and beverage compliance and service concerns such as, Health Department regulations, TABC controls and alcohol beverage service guidelines and standards. Support Assistant Director with market analysis and menu creation. Be creative regarding food & beverage selection, pricing, merchandising, and marketing. Maintains POS database and system and acts at the account co-administrator. Accountable to carry out the overall direction and coordination of Food and Beverage units under supervision of the Assistant Food & Beverage Director. Carries out supervisory responsibilities in accordance with SAVOR/ASM's policies and applicable laws. Responsibilities include the facilitation of recruiting, interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees in conjunction with Human Resources; addressing complaints and resolving problems under the guidance of the Assistant Food & Beverage Director. Works with SAVOR Assistant Director of Food & Beverage to further support the ASM Knoxville SAVOR operation portfolio (Knoxville Civic Auditorium & Coliseum, Chilhowee Park & Exposition Center, Knoxville Convention Center & World’s Fair Exhibition Hall). Works with the venue Directors to support the needs of the clients for each event. Other duties as assigned. Supervisory Responsibilities Position is responsible for managing the KCAC and CPEC Food & Beverage staff and working with the Assistant Director of Food & Beverage to support all venue operations. Qualifications To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. Education and/or Experience Certificate or degree from an accredited culinary school, college or technical school preferred. Minimum 2 years' experience in supervisory level position in Food & Beverage or equivalent combination of education and experience. Previous experience in overall Food and Beverage operations, sales, inventory control, cost control and food preparation procedures. Previous experience in food and beverage purchasing (Catering & Concessions), using inventory levels and sales forecasting. Knowledge of current culinary and concession trends, presentation, and food quality. Certification, Skills and Abilities Food safety and health code compliant. Maintain PCI Compliance certification. TABC certified. Alcohol awareness certificate and training capabilities. Must be able to adapt to changes in the work environment including temperature, sounds, and smells. Must be able to execute amongst competing demands, frequent changes, delays or unexpected events. Effectively present and respond to questions from top management, clients and public groups. Ability to multi-task and establish priorities. Strong orientation to customer service and ability to work with clients and staff members. Results oriented individual with the ability to meet required budgetary goals. Excellent organizational, multi-tasking, planning, written and verbal communication skills. Attention to detail and service oriented. Ability to be creative with food & beverage presentations and maintain a quality product. Must be able to pass criminal and credit background check. Computer Skills Computer skills including proficiency with Microsoft Office programs. Knowledge of POS systems preferred; especially Clover systems. Knowledge of Event Booking software preferred. Knowledge or Workday and ABI payroll systems preferred. Other Qualifications This position will work with limited supervision and will require the ability to interact with all levels of staff including management. Requires ability to work flexible hours, including nights, weekends and holidays, in addition to normal business hours.
