Culinary Manager Job Summary:
The Culinary Manager will assist the General Manager in managing and overseeing the daily back of house operations of the cafe.
Supervisory Duties & Responsibilities:
· Hires and trains BOH cafe staff· Organizes and oversees BOH staff schedules· Conducts performance evaluations that are timely and constructive· Handles progressive of BOH employees in accordance with Company policy
Duties/Responsibilities:
· Manage and oversee the kitchen operations working closely with the GM to ensure the overall success of the cafe· Ensure compliance with health, safety, food handling, and hygiene standards· Ensure all pertinent staff members have a current sanitation & safety certification(s)· Complete food inventories and place food orders effectively and in a timely manner· Control food cost and usage by following proper and responsible food requisition and storage procedures while maintaining waste control efforts· Ensure that all equipment is kept clean and in excellent working condition through personal inspection and preventative maintenance plans· Oversee the continuous training of kitchen employees on kitchen equipment, utensils, cleanliness, sanitation practices, proper lifting and carrying techniques, and handling hazardous materials· Prepare and submit operations reports and other documentation as requested by General Manager· Perform other duties and support functions as assigned
Required Skills/Abilities:
· Strong supervisory and leadership skills· Excellent interpersonal skills with a focus on customer service· Excellent time management skills· Excellent organizational skills and attention to detail· Familiarity with food handling, safety, and other restaurant guidelines· Proficient with Microsoft Office Suite or related software
Education and Experience:
· High school diploma or equivalent required· 3 years of previous restaurant experience required; management experience preferred· Successful completion of corporate’s 6-week training program required· Achieve a passing score on the ServSafe exam or possess a valid ServSafe certification
Physical Requirements:
· Ability to traverse all parts of the restaurant quickly· Prolonged periods of standing and walking· Must be able to lift 25 pounds at times
