We are looking for a creative culinarian who is a driven leader, a savvy business partner, and truly good human to bring energy, experience, and synergy to Portsmouth s most dynamic food and beverage complex. The Director of Culinary Operations position will be a hands-on Executive Chef for The Rooftop at the Envio (one of Portsmouth s premier dining and drinking spots), 9000 square feet of gorgeous event space between The Envio and The Venue at Portwalk Place as well as the AC Hotel. It is a big job that is not for everyone but for a highly motivated and talented chef, it is a fantastic opportunity.

General Responsibilities:

  • Ensure an exceptional culinary experience for every guest while maximizing department profitability
  • Oversee of all culinary operations including food production, kitchen safety and sanitation, scheduling, training, ordering and menu creation
  • Work closely with sales teams and hotel general managers at assigned hotels
  • Recruit, interview and hire culinary associates for assigned property
  • Train and support all culinary associates and ensure performance in accordance with established hotel brand and Colwen standards
  • Conduct performance management reviews and follow ups
  • Create and implement new menus and individual menu items based on current food trends, venue concept and regional tastes
  • Develop innovative menu selections for special events and functions in accordance with client dietary and budgetary considerations and expectations
  • Document recipes and train the team on new recipe items
  • Coordinate, plan, participate and supervise the production, preparation and presentation of food for restaurants, events and lounge areas
  • Ensure a clean, safe and sanitary kitchen in compliance with all local, state, OSHA and federal food safety standards
  • Lead by example to include working hands on with the team when needed
  • Ensure that all required associates have current ServSafe certification
  • Manage food storage rooms and walk ins/refrigeration to maintain high quality product and to ensure food safety standards
  • Calculate and manage food costs within budget by reacting quickly to shifts in the supply chain
  • Ensure proper production based on forecast and banquet event orders
  • Follow proper ordering procedures based on business demands
  • Manage schedule to ensure labor costs meet /exceed budget
  • Ensure food deliveries are checked for product quality and quantity
  • Perform other duties as assigned

Requirements:

  • Able to understand financial goals and accomplish them
  • 5 years of F&B experience (hotel experience preferred)
  • Excellent written and verbal communication skills
  • Proven track record in social and corporate catering
  • Strong knowledge of HACCP procedures and application
  • Knowledge and prior experience with outside vendors and associated ordering systems
  • Strong team leader
  • Strong presentation skills
  • Intermediate to advanced computer skills
  • Ability to learn computer systems and operate POS system
  • Willingness to work a rotational work schedule including nights, weekends, and holidays
