**Food Service Director**

**Description** HCR ManorCare provides a range of services, including skilled nursing care, assisted living, post-acute medical and rehabilitation care, hospice care, home health care and rehabilitation therapy.

The Food Service Director organizes, plans, directs, controls, and supervises functions and personnel within the dietary department which provides food and nutrition services. Ensures the provision of quality food service and nutritional care.

****Educational Requirements****

Associate's or higher degree in food service management or in hospitality, including a course of study in food service or restaurant management from an accredited institution of higher learning.

****Position Requirements****

Food service supervisory experience required; at least two years experience in long term care preferred.

To be qualified, must meet the following criteria:

* ServSafe Certification for Managers, National Restaurant Association, and

* Certified Dietary Manager, Certified Food Protection Professional (CDM, CFPP), per the Certifying Board for Dietary Managers, the credentialing agency of the Association of Nutrition & Foodservice Professionals (ANFP), or

* Associate or higher degree in food service management or in hospitality, including a course of study in food service or restaurant management from an accredited institution of higher learning

Job Specific Details: Uses standard pecautions as outlined in the Infection Control manual.

Maintains ServSafe Manager certification (NRA) in food safety.

Provides nutritional care within scope of practice.

Ensure physician's orders are followed.

Meet with residents regarding menus, food service food preferences.

Ensure compliance with nutritional stardards, govt regulations and center policies and procedures.

Purchases food and supplies through DSSI (HCR ManorNET), Sysco and contacts Purchasing Dept about local producers.

Develops and maintains a system for dietary staff, patients and other staff to know daily menus.

Evaluate and monitor food service operation.

Maintain standards for food preparation and quality of food service.

Monitor portion control and ensure meals are timely and accurate, via menu.

Coordinates dining room service and meals served in patient rooms.

Conducts safe food handling training for Dietary staff and ensure staff has completed the Food handlers training course on HCR Manorcare University.

Weekend work will be required.

CPR certified is a plus.

* Answer telephone in a courteous and friendly manner including, but not limited to, giving store greetings, directions to store location, and receiving and filling customer orders.

* Assist in receiving, processing, and replenishing merchandise.

* Maintain merchandising, presentation, and display standards. Ensure the sales floor is customer-ready.

* Ensure Company standards for cleanliness for the sales floor, stockroom, restrooms, cash wrap, and hospitality area.

* Accurately and efficiently processes all register transactions.

* Perform any other duties as directed by management.

**Environmental Factors:**

* Must be able to stand or walk for up to eight hours a day.

* Frequent reaching and bending and twisting below the waist and above shoulders.

* Frequently lifting up to twenty pounds, occasionally lifting up to 40 pounds. Push/pull up to 20 lbs.

* Ability to climb ladders, reach and bend.

* Work in temperatures ranging from 50 - 85 degrees especially in our stock room areas.

* Use of a computer up to 60 % of the time throughout the day.
