City of Salem is Hiring a Food and Beverage Manager Near Salem, VA

Performs complex administrative work planning, implementing, and supervising all food service operations and activities of the Civic Center (catering, banquet, and concession events), managing contracts, receiving and processing payments, and related work as apparent or assigned. Work is performed under the general direction of the Director of Civic Facilities. Divisional supervision is exercised over all personnel within the division.

Essential Functions:

Ensure legal, efficient, professional, profitable operation of food and beverage in Catering and Concessions.Oversees all catering food and beverage operations on and off site; contacts and meets with clients; negotiates and prices contracts; creates menus for special events/clients. Prepares bills and collects contract payments; collects, counts, and deposits monies received.Directs the procurement and delivery of food and beverages, equipment, and kitchen supplies; maintains accurate monthly inventories and food costs; receives and stocks inventory.Maintains weekly payroll; completes required paperwork.Oversees all concession food and beverage operations on and off site including managing the Civic Center concession stand, Moyer Sports Complex, Salem High School, and a mobile unit.Generates and reviews financial reports, including budget projections, forecasting, revenue analysis, disbursements, capital investments, labor and production costs, etc.Analyzes ticket sales in relation to anticipating staffing needs, target market demographics, determine and project point-of-sale to guest ratio.Recruits and selects department personnel; assigns, directs, trains and inspects the work of staff; rewards, disciplines, coaches, counsels and evaluates staff performance; develops staff schedules.Collaborates with key Civic Center and other concession event staff to ensure event success; oversees and ensures rooms are set up in coordination with Event Manager; ensures proper equipment is available; ensures any special needs are met. Assists the Chef and Assistant Chef as needed with cooking, displaying food, and ensuring carving stations are properly set up.Prepares and reviews Federal reports; ensures compliance with U.S.D.A., ABC, and State Laws; conducts staff safety training as needed. Other duties as assigned.

Special Requirements:

Education & Experience

Bachelor's Degree or equivalent from a four-year college or university with a business and/or culinary related major required; or equivalent combination of education and experience. A minimum of five years of extensive experience in large scale food preparation and kitchen management preferred.

Knowledge, Skills, & Abilities

Comprehensive knowledge of the practices, procedures, and regulations relating to Civic Center food service operations (catering, banquet, and concert concessions); thorough knowledge of food quality and values, and of nutritional and economical substitutions within food groups with a preference for some knowledge of special dietary requirements; thorough knowledge of the principles and practices used in ordering, receiving, storing food in large quantities, and kitchen organization; thorough knowledge of budgeting and accounting practices and procedures; thorough knowledge of kitchen sanitation and safety measures used in food handling and in the operation, cleaning, and care of utensils, equipment, and work areas; general knowledge of Federal, State, and local laws applicable to food service and personnel; ability to plan and supervise the work of subordinate employees; ability to work effectively under stressful situations; ability to prepare reports; ability to establish and maintain effective working relationships with ABC agents, the health department, other City departments, associates, guests, and the general public. Must be able to work flexible schedule, and willing to work long nights and weekends as needed.

Physical Requirements

This work requires the occasional exertion of up to 50 pounds of force; work regularly requires standing, walking, sitting, speaking or hearing, using hands to finger, handle or feel and tasting or smelling, frequently requires reaching with hands and arms, pushing or pulling and repetitive motions and occasionally requires climbing or balancing, stooping, kneeling, crouching or crawling and lifting; work has standard vision requirements; vocal communication is required for expressing or exchanging ideas by means of the spoken word; hearing is required to perceive information at normal spoken word levels; work requires preparing and analyzing written or computer data, using of measuring devices, operating machines, operating motor vehicles or equipment and observing general surroundings and activities; work frequently requires exposure to outdoor weather conditions and occasionally requires working near moving mechanical parts, exposure to fumes or airborne particles and exposure to extreme cold (non-weather); work is generally in a moderately noisy location (e.g. business office, light traffic).

Pay: $56,933.61 - $91,093.77 per year
