Pilot Project Brewing is an experimental brewery incubator and tasting room. Spanning breweries and culinary creatives nationally, Pilot Project exists as an open-source brew and tasting facility that fosters experimental, small-batch brewing, presents an uncontested consumer tasting experience, and acts as an industry-defining collaborative brewing incubator. When there are over 200+ developing breweries in Chicago alone, why compete when you can support them all?
