Brief Description
As the Food Safety and Sanitation Manager will manage, plan, conduct and audit the day-to-day sanitation operations of all dining kitchens in accordance with established policies and federal and state guidelines, to include regulatory compliance, quality services and a safe and sanitary working environment while supervising the work of others. Manage budget compliance of all food, chemicals, disposables, and small wares used in dining. Maintain all dining equipment within budgetary guidelines. Assist Executive Chef in scheduling of staff and in scheduling and execution of mandated regulatory training.
Shift Details: Full-Time. This position is typically a mid-shift schedule, though could require some earlier AM or later PM coverage from time to time.

MAJOR ACCOUNTABILITIES/ESSENTIAL JOB DUTIES:
- Interview, hire, supervise, coach, evaluate, discipline, and assist employees in setting and meeting performance goals. Develop and monitor performance and responsibilities of assigned staff while monitoring staffing patterns
- Responsible for compliance to all federal, state, and local mandated regulations; conduct audits to ensure sanitation and repair needs are met, including follow-through with corrections
- Review and develop sanitation plans, procedures, and training as necessary; partner with other disciplines within the community to ensure areas of responsibility are always survey ready; assist chefs in staff training, adherence to regulations, and proper stewardship of resources
- Work with Management Team to ensure ongoing sanitation audits in all areas on a daily basis; document daily sanitation, dish machine temperatures, cooler temperatures and weekly preventative maintenance audits ensuring all areas are clean, maintained and safe for our residents and staff; compile monthly summary of sanitation audits within all areas of dining
- Ensure all equipment is properly maintained; supervise all preventive as well as emergency maintenance; develop working relationship with outside maintenance vendors and ensure work is to standard; maintain budgetary compliance of maintenance costs
- Maintain staff schedules of all sanitation staff ensuring proper coverage; meet with staff for progressive development to ensure staff success and assure there is equity in the processes; assist Executive Chef in scheduling and supervision of kitchen staff, as needed
- Maintain and organize stocked supplies to ensure product availability
- Facilitate the receipt of deliveries to validate order accuracy
- Partner with pest management to ensure proper communication and proactive measures are in place
- Promote an environment of continuous quality improvement
- Develop effective partnerships with federal and local Departments of Health

- Ability to lift 45 pounds without assistance, 46 pounds with manual or mechanical assistance

- Knowledge of Microsoft Office Suite
- Ability to read and understand written and verbal communication
- Understand state, federal, and local sanitation policies and procedures and all regulations that apply to our licensed community
- Skillful at motivating and leading a diverse team with positive outcomes
- Knowledge of Budget process
- High School Diploma or equivalent
- Previous experience working with State or Local Dept. of Health
- 3-5 years in restaurant management
- Serv-Safe Certified
