Key Responsibilities
- Food Service Management
- Plan, organize, and direct all dietary department activities
- Ensure meals are prepared and served on schedule
- Maintain high standards of food quality, taste, temperature, and presentation
- Nutritional Oversight
- Collaborate with a Registered Dietitian to develop menus that meet residents’ dietary needs
- Ensure compliance with therapeutic diets (e.g., diabetic, low-sodium, pureed)
- Monitor resident satisfaction and adjust menus accordingly
- Regulatory Compliance
- Ensure compliance with Centers for Medicare & Medicaid Services (CMS) guidelines
- Follow state health department regulations and sanitation standards
- Maintain proper documentation for inspections and audits
- Staff Supervision
- Hire, train, and supervise dietary staff (cooks, aides, dishwashers)
- Schedule staff and manage labor costs
- Conduct performance evaluations and ongoing training
- Budget & Inventory Control
- Develop and manage departmental budget
- Order food, supplies, and equipment
- Control food costs and minimize waste
- Sanitation & Safety
- Enforce food safety standards in accordance with Food and Drug Administration (FDA) guidelines
- Ensure kitchen cleanliness and proper food storage
- Maintain compliance with infection control policies
- Resident Interaction
- Address resident complaints and preferences
- Participate in care plan meetings when needed
- Promote a positive dining experience
- High school diploma or equivalent required; Associate’s or Bachelor’s degree in Food Service Management, Nutrition, or related field preferred
- Certified Dietary Manager (CDM) credential required
- Previous experience in healthcare or long-term care food service
- Knowledge of therapeutic diets and food safety regulations
- Strong leadership, organizational, and communication skills
