What You'll Do
- Lead all pastry and baking operations across multiple dining outlets, banquets, weddings, conferences, and special events.
- Develop innovative seasonal dessert menus, artisan bread programs, specialty pastries, chocolates, cakes, and plated desserts.
- Manage production planning to support both daily restaurant service and large-scale banquet operations.
- Recruit, train, mentor, and inspire a large pastry team while building a culture of accountability and excellence.
- Maintain exceptional quality, presentation, food safety, and consistency across every outlet.
- Oversee inventory, purchasing, labor management, scheduling, and departmental financial performance.
- Partner with culinary leadership to create memorable dining experiences throughout the resort.
- Stay current on industry trends while introducing fresh ideas that elevate the overall pastry program.
What We're Looking For
- Proven experience as an Executive Pastry Chef or Senior Pastry Leader in a luxury resort, hotel, casino, convention hotel, or other high-volume hospitality environment.
- Demonstrated success leading and developing large pastry teams.
- Expert knowledge of artisan breads, laminated doughs, viennoiserie, chocolates, cakes, plated desserts, pastries, and specialty confections.
- Experience supporting multiple outlets and high-volume banquet operations.
- Strong organizational, leadership, communication, and financial management skills.
- Passion for mentoring culinary professionals and creating a positive team culture.
- Ability to thrive in a fast-paced, multi-outlet operation while consistently delivering exceptional quality.
