Job Description
- Oversee high-volume food production, ensuring quality, consistency, efficiency, and professionalism.
- Develop, edit, and implement menus, recipes, and new food service programs.
- Manage food costing, menu mix, labor budgets, inventory, and overall kitchen expenses.
- Maintain kitchen sanitation standards and ensure compliance with safe food handling practices.
- Manage order guides, master prep lists, shrink logs, and other kitchen control systems.
- Hire, train, coach, counsel, and evaluate cooks, kitchen helpers, and department staff.
- Create and manage kitchen staff schedules to ensure adequate coverage and efficient labor utilization.
- Monitor food quality, production standards, portion control, and waste reduction.
- Maintain accurate kitchen records and utilize spreadsheets, databases, and word-processing programs for administrative tasks.
- Maintain regular, predictable attendance and demonstrate flexibility to work weekends, holidays, and extended hours as needed.
- Knowledge of food service sanitation and safe food handling practices.
- Experience hiring, training, coaching, counseling, and conducting performance evaluations for kitchen staff.
- Proficiency with Microsoft Office, spreadsheets, databases, and general office equipment.
- Strong knowledge of food costing, menu mix, menu engineering, labor budgeting, and inventory control.
- Ability to lift up to 50 lbs. repeatedly.
- Flexibility to work weekends, holidays, and extended hours as business needs require.
- Reliable, regular, and predictable attendance required.
