The Baker is responsible for preparing and executing all baked goods and desserts including breads, pastries, cakes, and pies according to recipe specifications and production schedules. This position ensures consistent quality, proper food handling, and adherence to sanitation standards while working in a high-volume kitchen environment.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
- Prepares baked goods such as breads, pastries, pies, and cakes according to established recipes and production standards.
- Measures, mixes, portions, and arranges ingredients and products for baking and service.
- Ensures proper baking temperatures, timing, and techniques for a wide range of items.
- Maintains cleanliness and organization of workstations, equipment, and storage areas at all times.
- Follows food safety and sanitation protocols, ensuring proper labeling and storage of all ingredients.
- Adheres to large production schedules while maintaining consistency and presentation quality.
- Demonstrates accuracy in measuring and scaling ingredients in a fast-paced environment.
- Operates ovens, mixers, and other bakery equipment safely and effectively.
- Communicates with pastry chef and kitchen leadership regarding inventory, prep needs, and production goals.
- Performs other job-related duties as assigned.
SUPERVISORY RESPONSIBILITIES:
This position does not have direct supervisory responsibilities but may provide guidance or support to other team members.
QUALIFICATIONS:
- Strong baking skills with knowledge of pastry and dessert preparation.
- Ability to read and follow detailed recipes and instructions.
- Familiarity with commercial bakery equipment and tools.
- Excellent time management, organizational, and multitasking abilities.
- Ability to work independently and as part of a team in a high-volume production environment.
- High regard for food quality, consistency, and cleanliness.
EDUCATION and/or EXPERIENCE:
- High school diploma or equivalent preferred.
- Completion of a baking or pastry arts program is preferred.
- Food Handler Certification required or must be obtained upon hire.
- Minimum of 2–3 years of professional baking experience in a commercial kitchen or bakery.
- Skilled in preparing a variety of baked goods including breads, pastries, desserts, and specialty items.
- Ability to follow recipes, portion guidelines, and baking schedules with precision.
- Strong knowledge of baking techniques, food safety standards, and sanitation procedures.
- Experience working with mixers, ovens, proofers, and other baking equipment.
- Prior experience in a casino, resort, or large-scale production kitchen is preferred.
LICENSES, CERTIFICATES, REGISTRATIONS:
Must have successfully completed a background check and obtained a gaming license issued by the Morongo Gaming Agency, as required.

This is a dynamic, fast-paced environment that requires the ability to adapt and perform under pressure. The casino operates with moderate to loud noise levels and is a smoking environment, requiring team members to work comfortably in these conditions.
WORKING HOURS:
Morongo Casino Resort & Spa operates 24 hours a day, 365 days a year; therefore, flexibility in scheduling is essential. Team members must be available to work shifts that may include evenings, weekends, holidays, and special events. Schedules are subject to change based on business needs and may include overtime, as well as work on both weekdays and weekends.
