About the Role
Our client is seeking a talented Mexican Room Chef to lead the culinary operations of their Mexican cuisine outlet inside a well-known casino property. This role is ideal for a chef who combines authentic Mexican culinary expertise with strong leadership skills and a passion for delivering consistent, memorable guest experiences.
As the Mexican Room Chef, you will guide daily kitchen operations, shape menu offerings, oversee food quality and presentation, and support a high-performing culinary team. You’ll also play a key role in cost controls, kitchen safety, and collaboration with front-of-house partners.
What You’ll Do:
Culinary Leadership
- Prepare, cook, and present high-quality, authentic Mexican dishes.
- Develop new menu items, seasonal features, and promotional specials.
- Ensure consistency, flavor integrity, and high presentation standards.
- Conduct recipe testing, tastings, and plating refinement.
Team Management
- Supervise cooks, prep cooks, and stewards within the outlet.
- Train team members on culinary techniques, safety, and equipment use.
- Manage scheduling, daily assignments, and overall kitchen workflow.
- Coach and support staff to maintain a positive, efficient team environment.
Operations & Kitchen Standards
- Oversee inventory management, ordering, receiving, and storage processes.
- Ensure proper food handling, labeling, rotation, and waste reduction.
- Maintain an organized, clean, and safe kitchen at all times.
- Meet all food safety, sanitation, and regulatory requirements.
- Support food and labor cost targets through smart planning and execution.
Guest Experience & Collaboration
- Partner with front-of-house teams to ensure smooth, timely service.
- Assist with special events and themed culinary promotions.
- Interact with guests as needed to gather feedback and enhance satisfaction.
What You Bring
Required:
- At least 3 years of culinary experience, including 1 year in a supervisory role.
- Strong expertise in authentic Mexican cuisine and cooking techniques.
- Knowledge of kitchen operations, safety, and sanitation.
- Ability to lead in a fast-paced, high-volume setting.
- Strong communication, organization, and problem-solving abilities.
- Flexibility to work varied shifts, including weekends and holidays.
Preferred:
- Experience in casino, resort, or large hospitality environments.
- Culinary training or professional certifications.
- Bilingual English/Spanish.
Salary : $65,000 - $70,000
