HB Management in Training – Food & Beverage
Job Overview: Assist in overseeing the day-to-day operations of the outlet to ensure the quality and standard of product and service are being met. Assist in scheduling, supervising, training and counseling staff. Consistently review the restaurant’s profit and loss and focus on achieving set budget. Apply marketing promotion in the restaurant to boost monthly revenue. Create SOPs for additional standards necessary to improve the operation. Assume the responsibility of the Restaurant Manager in his/her absence.
Essential Duties:
1. Assist to manage restaurant following company policies, procedures and terms and conditions of the CBA.
2. Assist restaurant manager to oversee the day-to-day operations of the restaurant assigned to ensure the quality and standard of product and service are being met.
3. Knowledgeable on the menu and all food and beverage served in the restaurant.
4. Review reservations, floor plan, and seating charts prior to service.
5. Ensure all supplies, equipment and linen are available for operation.
6. Greet guests, assist in seating, and servicing when needed.
7. Ensure that special requests and VIPs are serviced properly.
8. Ensure county regulations and hotel policies on serving alcoholic beverages are followed.
9. Assist with training, supervision, evaluation, counseling, and discipline for staff.
10. Respond and resolve guest or employee concerns in a timely manner.
11. Check daily labor report to ensure staff levels are within the set budget.
12. Regularly gather ideas for marketing promotion in the restaurant and set one in place each month.
13. Create SOPs for additional standards necessary to improve the operation.
14. Ensure safety training and standards are maintained.
15. Relieve in other food and beverage positions as needed.
16. Assume the responsibilities of the Restaurant Manager in his/her absence.
17. Perform other related duties as assigned or required.
Other Duties:
1. Conduct daily pre-shift meetings.
2. Attend resort management meetings.
3. Maintain department bulletin boards.
4. Assist restaurant staff with service as needed.
Working Conditions:
1. Normal office conditions
2. Indoor/Outdoor Hotel restaurant or venues that is open for service.
3. Restaurant kitchen; normal kitchen noises, loud voices, loud machines
Work Hours:
1. Able to work schedule determined by the Director of Food and Beverage.
2. Able to work long and irregular hours.
3. Able to work in excess of 50 hours per week.
Equipment Use:
1. Proficient in the use of a computer and with the resort’s word, spreadsheet and other required software.
2. Telephone
3. Various office equipment including but not limited to calculators, photocopiers and facsimile machines.
4. Company’s point of sale system.
5. Restaurant equipment, i.e. coffee maker, cart, espresso machine, etc.
Mental and Physical Demands:
1. Able to prioritize and organize workload to ensure deadlines are met.
2. Able to manage stressful and challenging situations.
3. Able to stand, walk, bend, reach during restaurant hours.
4. Able to sit at a desk to do administrative duties.
5. Lift and carry up to 25 lbs.
6. Push and pull up to 50 lbs.
Communication Demands:
1. Able to communicate verbally and in writing to employees, managers and guests.
2. Able to communicate on the phone.
3. Able to write memos, procedures, and policies
Minimum Qualification Requirements:
1. Dept. of Health TB clearance
2. Skills to effectively supervise and manage the department and meet goals
3. Must be pleasant, friendly and smiling
4. Ability to multi-task
