Viceroy is Hiring a Kitchen Supervisor Near Chicago, IL

Viceroy Chicago, located at the site of the 1920's-era Cedar Hotel, among historic mansions and just steps to the Magnificent Mile and Lake Michigan, Viceroy Chicago offers a locally-inspired luxury experience with 180 guestrooms, including 18 suites. Explore modern, Midwest flavors at the hotel’s restaurant or head up to the rooftop bar, pool and lounge, perched 18 stories high for a sweeping panorama of Great Lake views and Chicago’s iconic, soaring skyline.

Scope of this position:

  • Communicate with Executive Chef, Executive Sous Chefs and Sous Chefs about food and beverage production and service areas of the hotel.
  • Ensure all food produced is in line with kitchen recipes and standards.
  • Check all food is stored and handled as per current food health and hygiene regulations.
  • Ensure that work area, equipment and section is kept clean at all times, in accordance with current health and hygiene regulations.
  • Monitor daily kitchen food and product requirements and advise the Executive Chef, Executive Sous Chefs and Sous Chefs of these well in advance.
  • Monitor food preparation and wastage costs control these by following efficient preparation methods and standard recipes.
  • Suggest any improvements that could be made to improve existing service or procedures, log and inform the Executive Chef, Executive Sous Chefs and Sous Chefs of any service or system problems.
  • To ensure that all employees provide a friendly, courteous and professional service at all times.
  • To assist in the training of employees, making sure that they have the skills necessary to perform their duties in the most productive way.
  • To attend training sessions and meeting as and when required.
  • To conduct and/or contribute to regular Hotel and Department Meetings.
  • To be flexible in your job function and perform any other reasonable duties and responsibilities which may be assigned to you, including redeployment to other departments/areas if required.
  • Any other reasonable request as required by Hotel Management.

Qualified candidates will possess the following:

  • Three or more years of work experience in a luxury resort in a similar position.
  • Comply with all policies, procedures and regulations that relate to the restaurant and local, state and federal laws
  • Must be able to walk and stand for up to four (4) or more hours in length
  • Must be able to bend, stoop, squat and stretch
  • Must be able to occasionally lift items up to 25lbs
  • Must be able to around heat and equipment emitting heat for up to four (4) hours in length

  • All colleagues must maintain a neat, and well groomed appearance (specific standards will be provided)
